Abstract
L'invention concerne des procédés de détection d'enzymes actives sur le plan enzymatique présentes dans des aliments, ajoutées pendant une étape de prégranulation. L'invention concerne en outre le domaine de la détection d'enzymes thermotolérantes ajoutées à des aliments pendant l'étape de prégranulation. L'invention concerne de manière spécifique la détection d'une enzyme phytase, en particulier une phytase E. coli ou une phytase dérivée deE. coli dans des aliments, de type phytase Quantum~.
