Abstract

L'invention concerne un procédé de préparation d'un produit alimentaire comestible aéré comprenant des inclusions dispersées en son sein, le procédé comprenant les étapes consistant : a) à prendre un appareil servant à déposer simultanément des inclusions comestibles assorties d'un fluide comestible sur un substrat, l'appareil comprenant : une buse à double conduit comprenant : un conduit externe s'étendant depuis une première entrée jusqu'à une sortie externe comportant un orifice de sorte externe; et un conduit interne, s'étendant depuis une seconde entrée jusqu'à une sortie interne comportant un orifice de sortie interne; les orifices de sortie interne et externe étant situés à proximité l'un de l'autre, le conduit externe étant, lors de l'application du procédé, en communication fluidique avec une première source fournissant, éventuellement en continu, un fluide comestible aéré; et le conduit interne étant en communication fluidique avec une seconde source fournissant, éventuellement en continu, des inclusions comestibles; au moins un moyen de détection qui mesure au moins un paramètre d'entrée, ledit paramètre d'entrée pouvant déterminer directement et/ou indirectement : la densité instantanée des inclusions et/ou du fluide dans l'appareil; et un moyen de réglage de densité pouvant être commandé par un moyen de commande afin de modifier la densité du fluide, le moyen de commande et le moyen de détection étant éventuellement en liaison directe ou indirecte de façon à ce que les paramètres de commande puissent être produits directement et/ou indirectement en réponse à des variations des paramètres d'entrée; b) à introduire le fluide aéré comestible en provenance de la première source par le conduit externe afin qu'il sorte de l'orifice de sortie externe, afin de former un écoulement externe du fluide dirigé vers le substrat; c) à introduire des inclusions par le conduit interne afin qu'elles sortent de l'orifice de sortie interne, afin de former un écoulement interne d'inclusions dirigé vers le substrat; d) à déposer l'écoulement interne d'inclusions et l'écoulement externe de fluide aéré sur le substrat sensiblement au même moment, les écoulements sortant de l'appareil à proximité l'un de l'autre mais restant sensiblement séparés, et l'écoulement de fluide externe entourant au moins partiellement l'écoulement interne d'inclusions lors de leur déplacement en direction du substrat; et les écoulements se mélangeant sur le substrat afin de former un mélange sur ce dernier; et e) à éventuellement solidifier le mélange sur le substrat; afin de former des compositions alimentaires aérées comportant des inclusions dispersées en leur sein.
