Abstract
La présente invention concerne des émulsions de légume stables, en particulier des émulsions contenant de la pomme de terre. Ces émulsions, procurant un goût agréable et une sensation en bouche, sans aucune granulosité, sont destinées à être utilisées dans des produits tels que des smoothies sous la forme de boissons contenant des fruits et des légumes, des soupes et des sauces. L'invention concerne également un procédé de préparation de l'émulsion de légume stable.
