Abstract

L'invention concerne un procédé de production d'un isolat de polysaccharide pectique hydrolysé qui est enrichi en rhamnogalacturonane-l, ledit procédé comprenant les étapes consistant à : fournir un substrat riche en pectine qui a été obtenu à partir de matière végétale sans utiliser de solvant organique, ledit substrat riche en pectine contenant au moins 3 % en poids de matière sèche de polysaccharides pectiques ; soumettre le substrat riche en pectine à un traitement enzymatique pour hydrolyser partiellement les polysaccharides pectiques, ledit traitement enzymatique comprenant l'utilisation d'une ou de plusieurs pectinases choisies parmi la pectine lyase (EC 4.2.2.10), la pectate lyase (EC 4.2.2.2), la rhamnogalacturonane galacturonohydrolase (EC 3.2.1.173), l'endopolygalacturonase (EC 3.2.1.15), l'exopolygalacturonase (EC 3.2.1.67 et EC 3.2.1.82) ; soumettre les polysaccharides pectiques partiellement hydrolysés à une ultrafiltration à l'aide d'une membrane d'ultrafiltration ayant un seuil de rétention des molécules dans la plage de 5 à 100 kDa ; et récupérer le rétentat d'ultrafiltration. La présente invention concerne en outre l'isolat de polysaccharide pectique hydrolysé obtenu par le présent procédé et un procédé de préparation d'un produit choisi parmi une formulation nutritionnelle, un produit alimentaire, un complément alimentaire, une boisson ou un produit pharmaceutique, ledit procédé consistant à ajouter l'isolat de polysaccharide pectique hydrolysé susmentionné.
