Abstract

L'objet de la présente invention est de fournir une plaque de congélation sûre et robuste destinée à être utilisée dans une installation de congélation dans l'industrie alimentaire, la plaque de congélation pouvant être facilement fabriquée et entretenue. En outre, l'objet de la présente invention est de réduire la propagation de maladies infectieuses et de risques associés à des agents pathogènes d'origine alimentaire, qui peuvent se produire dans une installation de congélation industrielle. La présente invention aborde ce problème en fournissant une plaque de congélation pour congeler des articles alimentaires, comprenant : - une pluralité de tubes de congélation quadrilatéraux fabriqués en acier inoxydable, les tubes de congélation quadrilatéraux ayant une longueur sensiblement similaire s'étendant dans une direction longitudinale, le tube de congélation quadrilatéral ayant un côté supérieur, un côté inférieur, un premier côté et un second côté, les tubes de congélation quadrilatéraux étant disposés de manière adjacente et avec leur direction longitudinale les uns à côté des autres formant une plaque de congélation, une extrémité d'entrée et une extrémité de sortie étant disposées dans l'une ou l'autre extrémité desdits tubes de congélation, - une section entrée, au moins une partie de ladite section entrée étant disposée perpendiculairement à la direction longitudinale desdits tubes de congélation quadrilatéraux, la section entrée comprenant une cavité d'entrée, qui est en communication fluidique avec ladite extrémité d'entrée dudit au moins un tube de congélation quadrilatéral par l'intermédiaire d'un ou de plusieurs orifices disposés le long d'une direction longitudinale de la section entrée, - une section sortie, au moins une partie de ladite section sortie étant disposée perpendiculairement à la direction longitudinale dudit tube de congélation quadrilatéral, la section sortie comprenant une cavité de sortie, qui est en communication fluidique avec ladite extrémité de sortie dudit au moins un tube de congélation quadrilatéral, à travers un ou plusieurs orifices disposés le long d'une direction longitudinale de la section sortie, la cavité d'entrée de la section entrée étant en communication fluidique avec la cavité de sortie de ladite section sortie à travers au moins un conduit desdits tubes de congélation quadrilatéraux.
