Meat and ice-cream processing machine For processing meat, bacon, rinds, flexes, scalp and leg skins, etc. from the coarse piece to any desired grain size and from this to the finest pulp, various machines are required up to now, their acquisition for small and Medium-sized companies are often out of the question, who are satisfied with a meat grinder and a meat cutter and refrain from the appropriate processing of high-quality by-products such as rinds, flexes, scalp and leg skins. In such establishments there is often no ice cutter for processing the pieces of ice into snow form.
The present invention seeks to remedy this problem by means of a meat and ice processing machine, with which meat, bacon, rinds, flexes, scalp and leg skins can be processed and also ice, mixed up to the finished sausage meat composition with the desired grain size .
The present meat and ice cream processing machine has a built-in electric motor in a base and a housing placed on the base containing a colloid grinder with a lateral discharge opening and a filling funnel located above the housing.
It is characterized in that the colloid grinding set to be driven by a vertical drive shaft can optionally be exchanged for a cutting set for forming a grinder and for a cutting element for forming an ice cutter, with these being driven by the mentioned vertical drive shaft, the processing elements can remove the processing material Funnel attachment can be supplied,
Furthermore, after lifting the respective funnel attachment and removing the processing organs mentioned, a meat cutter housing can be placed on the housing of the machine and its vertical cutter shaft can be coupled to the drive shaft, which cutter shaft carries at least one horizontal knife, which together with a separately driven mixing organ is working,
which the latter can also serve as a scraper and during the reverse run as an ejector for the cut material processed into sausage meat through a closable ejection opening attached to the side of the bowl wall of the stationary bowl at bowl base height.
The subject matter of the invention is shown in an exemplary embodiment in the accompanying drawing. It shows: Fig. 1 the meat processing machine as a colloid mill in axial section, Fig. 2 in cross section and in plan view the mill insert of the colloid mill, Fig. 3 the machine as a grinder in axial section, Fig. 4 the machine as an ice cutter in axial section, Fig. 5 cut the same as a meat cutter in the axial direction,
6 shows the meat cutter in plan view, FIG. 7 shows an axial section of the upper bearing of the two driven shafts for knife and mixing device, FIG. 8 shows the mixing device in view.
The meat and ice cream processing machine shown has, according to FIG. 3, a base 1 with an electric motor 2 built into it. In this base 1, the motor shaft 3 is supported in an axially resilient manner in the thrust bearing 4. The coil spring 5 tries constantly to push the motor shaft 3 up. A housing 6 is seated on the base 1, in which a screw bushing 7 is rotatably supported by a screw 8. The latter can be turned by hand with a handwheel, not shown.
At the top, the screw bushing 7 is screwed to a tightly fitting Ge threaded ring 10 and is mounted there in a ball bearing 9 which sits on the motor shaft 3. By turning the worm 8, the motor shaft 3 can be raised and lowered with the worm gear sleeve 7 as a result of the threaded ring 10. On the upper stub shaft 11 sits a known centrifugal plate 12, in the fleas there is an ejection channel 13 in the housing wall of the housing 6 Ge. According to FIG. 1, a grinding body 18 is screwed to the centrifugal plate 12 and cooperates with a grinding ring 19 seated on the housing shoulder 15.
In this composition, the machine works as a known colloid mill, for processing the meat into the finest pulp and into a paste with a creamy consistency. By axially adjusting the shaft 3, the passage of the colloid grinding set can be widened or narrowed (FIG. 1).
The colloid grinding set 18, 19 can be replaced by a mincer knife 13 '(FIG. 3) and by a perforated disk 16 belonging to it. The mincer knife 13 'is tightened with a threaded pin 14 on the centrifugal plate 12 and the perforated disc rests on the housing paragraph 15. In this configuration, the machine works as a mincer, by 17 pieces of coarse meat, bacon, rind, head and through the funnel attachment Legs, etc. are fed to the cutting set 13 ', 16.
This cuts the material depending on the size of the holes of the interchangeable perforated disc 16 used in any desired grain size, whereupon the cut material is ejected through the ejection channel 13. The funnel attachment 17 is placed on the housing 6 and can be pivoted up on the former about the axis 18 '. The mincing knife 13 'rotates with its cutting edges on the upper flat surface of the perforated disk 16, and the contact pressure of the mincing knife can be regulated by adjusting the motor shaft 3 (FIG. 3).
If you need ice in the form of snow to process meat to sausage meat, then you lift the funnel attachment 17 from the housing 6, remove the grinding media 18, 19 or optionally the mincer knife 13 'and the perforated disk 16 and then screw it onto the as shown in FIG Throwing plate 12 places a milling disc 20 on and then places an attachment 21 with an eccentrically offset funnel 22. The milling disk 20 can be made of toothed webs or from a grating disk 20, etc. with the funnel 22 facing teeth.
The machine is now working as an ice cutter by feeding rod ice through the funnel 22 to the rotating cutter disk 20. The processed to snow ice is thrown out through the discharge channel 13 through.
If you now dismantle the milling disc 20 and the centrifugal plate 12 and also the funnel attachment 21, then a meat cutter can be placed on the housing 6 (Fig. 5). This has a gear box 23; which sits on the housing 6, supported vertical shaft 24, guided in the ball bearing 25 and roller bearing 26. This vertical shaft 24 is coupled to the drive shaft 3 by means of a centrifugal coupling or the like, in that one coupling part is seated on the shaft stub 11.
At the top, the vertical shaft 24 passes through the bottom 27 of a stationary cutter bowl 28 of cylindrical shape which is screwed to the gear box 23. This upwardly extending shaft 24 passes through a hollow shaft 29 and carries at least one horizontal and flat (not interlaced) knife 30 at the free end, which can only be one-armed or, as shown in FIG. 6, two-armed or multi-armed. It is arranged at a distance above the bowl bottom 27 and somewhat distanced above a mixing element 31. The latter is detachably coupled to the hollow shaft 29 at the top with a bayonet lock known per se.
The latter is mounted in ball bearings 32, 33 and carries a worm wheel 34 which meshes with a worm 36 driven by an electric motor. The electric motor 35 is seated on the side of the gear box 23. Instead of a worm gear, a chain gear could also be provided. The mixing organ 31 consists of two mixing arms 38 protruding from the coupling head 37 and rotating indirectly above the bowl bottom 27 and having a triangular cross-section.
At the free ends of the arms there are curved extensions 39 that strive upwards along the bowl wall and are bent backwards in relation to the direction of rotation and that brush along the fixed bowl wall 40 when the stationary bowl wall 40 rotates, thus simultaneously guiding the meat during the cutting process through the knife in a circulating sense. In order to avoid unnecessary friction, the knife itself does not have any properties that guide or circulate the meat. The mixing arms 38 are designed to be curved in the direction of rotation (FIG. 6).
At least one of the two extensions 39 carries a wiper strip 41 at the top at the free end, which circles along a cover 42 and, if necessary, wipes off any clippings adhering to it. The mixing organ 31 as a whole is thus formally adapted to the inner wall of the bowl 28 and its cover 42 in order to be able to work as a stripping organ (Schlesinger).
The cover 42 preferably consists of a transparent and splinter-free glass pane or the like enclosed in a frame 43, so that the processing operation can be controlled and influenced through this. It has a centrally arranged filling opening 44, provided with a funnel 45. In the side wall of the bowl 28 there is an ejection opening 46 at floor level, which can be closed with a door 47 which can be swiveled up. 48 is a under the discharge opening 46 be sensitive outlet.
The cover 42 is attached to the bowl housing 28 in a hinge-like manner. The knife 30 is tightened between two flanges 49, 50 with screws 51 and is releasably secured as a whole with a threaded nut 52 on the vertical axis 24. In the case of large machines with larger bowl contents, two or more knives can be arranged one above the other on the vertical shaft. 53 is a built-in thermometer for continuous control of the meat temperature and 54 is a so-called time stopwatch, which can be set in such a way that the electric motor or electric motors are automatically switched off after the processing process has been completed so that the cut product does not suffer any damage.
Before the start of the meat cutting process, ie before the cutter or flashing, the timer is set to the required acquisition time and the meat is poured into the bowl 28 in chunks without the addition of water or ice. Then you press, after you have set the machine to forward gear and the clutch is engaged, on the start button of the known time switch to start up the two motors 2 and 35 and thus the high-speed flash meter 30 and the slowly rotating mixer 31 in the direction of the arrow. The timer is z. B. set to 4 minutes running time of the machine and runs to zero, with the progressive working time can be read on the time scale.
After about 10 seconds, water or ice, if necessary both mixed together, is added to about 50% of the meat and, after a further 2 minutes running time, the other ingredients, such as bacon, rind, pork and veal. The rest of the water or ice as well as the spice and plasma (blood protein) are added between the two to three minutes running time.
In order for the sausage meat to bind properly, the temperature must be around +8 C while the external water is being absorbed. During the cutting process, the cutter knife 30 moves the meat product upwards from the mixing organ 31 in a circulating sense and mixes it and repeatedly feeds it to the rotating knife.
So that the cooked sausage can be sprayed immediately after cutting and placed in the hot smoke, the sausage meat in the machine must be heated to around +20 C immediately before leaving the machine so that a perfect reddening process is achieved in the hot smoke. By stopping the mixing organ and further rotating the cutter knife, this temperature increase can be reached within 10 seconds at the last moment of the acquisition time, i.e. immediately before the timer 54 stops the machine, i.e. during the last 30 seconds.
To eject the sausage meat, the direction of rotation of the motors is switched and the ejection opening 46 is opened. During the reverse movement of the cutting knife 30 and the mixing device 31, which now acts as a stripping and ejecting element, the sausage meat is ejected in about 10 seconds, with the meat residues still sticking insignificantly in the bowl 28 and under the lid 42 away from the mixing element 31 and its scraper bar 41 be wiped,
working as a so-called Schlesinger.
During the acquisition process, the Wurster has the option of keeping the meat and the work process in the cutter under control through the transparent cover 42 and, furthermore, of taking samples through the ejection opening 46. The machine attached Fa brication tables allow due to the special machine design and its novel Ar beitsweise with the help of the timer 54 a perfect quality of the sausage meat with constant production performance even for non-specialists.
For specialists, variations in the composition of the food to be cut and an increase in the amount of extraneous water and additional products are still possible.
Of course, this cutter can be equipped with two speed levels in order to be able to increase the speed of the knife and mixing organ during the processing process. If necessary, a continuously variable transmission could also be used.
The meat and ice processing machine described thus combines the meat grinder, the rind processing machine, the colloid mill, the ice breaker and the meat cutter, with the attachments and inserts being interchangeable with one another.
