  Beispielsweise hat man bereits für den Backprozess mit Papier ausgelegte Pappbehälter für den Teig verwendet und diese Behälter nach Entnahme aus dem Ofen und Abkühlung auf etwa   75-80     C mittels Eintauchen in Wachs oder Paraffin wasserdampfdicht verschlossen. Damit wird zwar der Ausbildung einer schimmelbegünstigten Atmosphäre bis zu einem gewissen Grade wirksam vorgebeugt, aber ein bereits bei   75-80     veranlasster, vollkommener Abschluss durch Umhüllen mit Paraffin oder Wachs hält im Inneren der Packung aus dem Backgut ausgetretene Feuchtigkeitsmengen zurück;

Process for the sterile packaging of bread or other freshly baked goods
The invention relates to the sterile packaging of freshly baked bread or similar baked goods fresh from the oven by introducing the baked goods fresh from the oven into a packaging that is sealed against unhindered release of moisture only after a certain moisture content has been reached, in particular to a packaging method in which the baked goods are in the state in which they after the baking process is finished, it is removed from the oven while it is hot, is wrapped in airtight manner and the packs obtained are tightly sealed by gluing by means of hot welding of the foils used or by similar customary measures.

Airtight packaging is already used in order to prevent premature spoilage or drying out of baked goods, as well as a deterioration in taste. The packaging materials and types used for this are sometimes very cumbersome and expensive, sometimes they lead to undesirable changes in the appearance and taste of the baked goods, or the packaging itself soon becomes unsightly.

  For example, cardboard containers lined with paper for the dough have already been used for the baking process and these containers have been sealed water vapor-tight by dipping them in wax or paraffin after they have been removed from the oven and cooled to around 75-80 ° C. This effectively prevents the formation of an atmosphere favored by mold to a certain extent, but a complete closure caused by coating with paraffin or wax at 75-80 retains amounts of moisture that have escaped from the baked good inside the pack;

this moisture will gradually be reabsorbed by the baked good, adversely affecting the taste and appearance of the baked good, apart from the fact that baking bread in such paper boxes is forbidden because the consumer demands bread with crust formation.

There are also already dense, i.e. H. Parchment-like or resin-impregnated papers or plastic films are commonly used. This provides protection against the penetration of harmful microorganisms and also improves the appearance of the goods, but spores or the like that have already been absorbed by the bread or baked goods before packing find undesirably favorable development opportunities within this tight packaging. The finished packs have therefore already been subjected to post-sterilization. This makes bread or the like germ-free, but at the same time the taste is often changed unfavorably. The effect of moisture during sterilization often also affects the appearance of the pack, especially with metal foil inserts, due to shrinkage and wrinkling.

At a correspondingly high temperature of the baked goods one avoids a harmful germ infestation, but it has been the case that the water that collects in the pack does not go back into the bread, as was assumed, so that it stays fresh, but the rind of the bread Makes bread spongy and unsightly and worsens the taste.

The invention is based on the object of providing a method that is easy to handle for the bakery and is particularly suitable for the working conditions of a large bakery, that sterile packaging of the baked goods, preferably bread, in foils without impairing appearance or taste and with improved preservation of the freshness of enjoyment desired by the consumer.

The method is characterized in that the baked good removed from the oven is wrapped in at least one film and sealed in this, which at temperatures between the hot, oven-fresh state of the baked good until it has cooled to a temperature of less than usual for storage 250 C does not allow any visible condensation to form inside the tightly closed pack and, once the storage temperature has been reached, allows for a further weight loss of the packaged goods of no more than 20 percent by weight of the weight loss that occurred during the cooling period from the oven-fresh state to the storage temperature.

This method is based on the finding that the change course, the changing water vapor permeability of the film in question - essentially dependent on the change in temperature and the moisture content of a substance enclosed in wrapping film - can provide a relatively simple and reliable prerequisite for meeting the requirement to satisfy a hot packaging through an airtight seal and a moisture release from the baked goods, the duration and quantity of which can be determined in advance and which takes place automatically and thus also provides the user with criteria based on,

in order to avoid the previous uncertainty about the respective suitability of the numerous packaging materials available and to secure against the loss of unusable material and subsequent complaints about its goods.

Although it was known per se in film production technology that the water vapor permeability of plastic films decreases with decreasing temperature, it was also a well-known finding that the course of the curves of this decrease in different types of film is very different and in many cases also steep and was straight forward.

However, since the amount of moisture released from the baked goods and the time required for it are given parameters with regard to the operational conditions, it was first necessary to recognize that the difference in the curve sequences mentioned must be possible because the problem of constant reliability and continuous operation to bring improved sterile packaging in accordance with the conditions just mentioned.

It plays an essential role that the user is given the security that the time required to remove the unwanted portion of liquid is also economical and in large-scale operations with the work cycle to be observed here, from the furnace removal through the knocking process and the removal to the deposit and the The distribution routes and distribution times to be taken into account remain in agreement.

It has proven to be useful in the implementation that the baked goods are wrapped in foils, which from the time of closure d. H. of the baked goods removed hot from the oven and immediately packaged - allow the packaged baked goods to lose moisture until the storage temperature of less than 250 C has been reached, which corresponds to a reduction in the weight of the baked good by about 1.5-4 O / o.

Preferably, a film is used which, after reaching the storage temperature, enables a further weight loss of the packaged goods of not more than 10% by weight of the weight loss that occurred during the cooling period from the oven-fresh state to the storage temperature.

A relatively simple check of the selected foils can be used to determine whether such a decrease in weight has occurred within a customary cooling period that is appropriate for the baked goods in question, or whether the foil shows condensation and the goods show a noticeably lower weight decrease or, without condensation, an undesirably large decrease in weight simply determine the further weight loss and compare it with the weight loss of the cool-down period. Cellulose derivative film has proven to be particularly suitable as a wrapping material.

In certain cases, when carrying out the process, it is also possible to accelerate the release of moisture during the cooling period, for example in order to achieve good adaptation to changes in the work cycle during operation. For this purpose, the freshly packaged goods can first be stored warm for a certain period of time, so that they are kept at a temperature corresponding to the desired permeability values of the film and the type of bread. On the other hand, as soon as the appropriate storage temperature is reached, any further release of moisture can be prevented or at least limited by spraying the wrapping material of the closed pack with sealing varnishes or plastic dispersions, thus making the casing completely or largely impermeable.

For this purpose, the pack can also be wrapped in waterproof foils such as polypropylene or polyethylene foils.

The attached curve sheet shows different cooling curves of differently packaged hot breads of the same type of bread. In this representation, the time in hours (and days) is entered on the abscissa and the weight loss in percent by weight is entered on the ordinate. By different hatching, the areas of the desired state of use are shown in the vertical direction upwards, i. H. the perfect freshness (1), furthermore a conditional use condition (2) and, separated from the initial condition too high humidity (3) and the condition of uselessness, drying out (4), the cooling zone (5) entered.

The curve a relates to an unpackaged bread. Curves b and c relate to breads which, when they are removed from the oven, are tightly packed in cellulose derivative films which are widely used.

Curves d and e also relate to breads of the same consistency and weight that are tightly packed in cellulose derivative films after they have been removed from the oven.

Curve f relates to bread of the same consistency and weight, packed in cellulose glass when it was removed from the oven, which was immediately wrapped in a polypropylene film after the six-hour cooling period had ended.

Finally, curve g relates to bread, also of the same consistency and weight, which was enclosed in a polypropylene or polyethylene film when it was removed from the oven.

The storage temperature for all breads was 20 ° C. with 45 to 55% relative humidity and low air movement.

From this graph it can be seen that the unpackaged test bread weighing 1000g (type of bread: wholemeal bread) experiences a 40/0 weight loss during the cooling period, after 55 hours it can only be used to a limited extent, i.e. H. must be described as too dry, and is hard to the touch after 100 hours.

Curves c and b show that after a weight percentage loss of between 2 and 3 O / o, the condition of excessive surface moisture is overcome after 20 or 28 hours and the duration of perfect freshness extends to about 5 days, whereas after the Curves d and e as a result of a moisture release that is too low during the cooling time and only reaches about 10 / o, the duration of the moisture period extends to almost three days and thus has values that are completely unusable for large-scale operations and shipping.

The curve f makes it particularly clear how steering the curve, i.e. H. after releasing a moisture content of about 3.5% by weight in the cooling period, the desired freshness condition could be determined almost unchanged over a measurement period of about nine days through a practically completely tight seal.

The curve g finally shows the completely unusable state of an oven-fresh bread wrapped in a dense material with far too little moisture release during the cooling period.
