Description
Die vorliegende Erfindung betrifft die Verwendung von heterocyclischen Verbindungen der nachstehend definierten Gruppen I und II als geschmacksverändernde Zusätze zu Nahrungsmitteln, Genussmitteln und Getränken mit dem Zweck, gebrannte oder Röstgeschmacksnoten zu erzeugen bzw. zu verstärken.
Unter geschmacksverändernd sind alle Vorgänge oder Behandlungen zu verstehen, durch welche geschmacksfreien bzw. geschmacksarmen Nahrungsmitteln und Getränken ein bestimmter Geschmack oder ein bestimmtes Aroma verliehen wird oder durch welche der Geschmack von Nahrungsmitteln und Getränken verstärkt, verbessert, überdeckt, unterdrückt oder sonstwie in einer bestimmten Geschmacksrichtung verändert wird.
Die der vorliegenden Erfindung zugrundeliegende Aufgabe bestand darin, die Auswahl der bisher zur Verfügung stehenden Geschmacksstoffe zu erweitern und dem Lebensmitteltechniker neue und verfeinerte Mittel in die Hand zu geben, um die von der Natur erzeugten Aromen auf synthetischem Wege besser nachahmen zu können. Die Veränderung oder Verbesserung der geschmacklichen Eigenschaften von Nahrungsmitteln und Getränken durch Verwendung von künstlichen Aromen mit genau reproduzierbaren Geschmackseigenschaften und qualitäten nimmt in der Lebensmittelindustrie mehr und mehr an Bedeutung zu, seitdem für die Ernährung des Menschen neue, bisher nicht verwendete Rohstoffe erschlossen werden, um der drohenden Verknappung der Nahrungsmittel in gewissen Gebieten des Erdballs entgegenzutreten.
Es wurde gefunden, dass die Verbindungen der nachstehend definierten Gruppen I und II entweder einzeln oder in Form zweckentsprechender Mischungen dazu geeignet sind, die Geschmackseigenschaften verschiedenster fester oder flüssiger Nahrungs- und Genussmittel oder Getränke im gewünschten Sinne zu verändern. Es können beispielsweise Produkte wie Gemüsesäfte, Milchprodukte, Kaffee-, Tee-, Kakao- und Schokoladeprodukte, Getreideflocken, Mehle, Konfiseriewaren, Fleischprodukte, Backwaren, Speiseeis usw., geschmacklich verändert werden. Die Erfindung eigent sich insbesondere zur Verbesserung oder Verstärkung des Geschmackes von konservierten Lebensmitteln. Ganz besonders eignet sich die Erfindung zur Veränderung, Verbesserung oder Verstärkung der Geschmackseigenschaften von sogenannten löslichen Kafeeprodukten (im englischen Sprachgebrauch als instant coffee bezeichnet).
Die erfindungsgemäss verwendbaren Verbindungen gehören zu den folgenden Gruppen:
I. Pyridine
II. Pyrazine
Im ersten Teil der nachfolgenden Beschreibung sind die Gruppen I und II definiert und durch Beispiele belegt. Im zweiten Teil ist die Beschreibung der geschmacklichen Eigenschaften der einzelnen Verbindungen der Gruppen I und II in den Tabellen I und II zusammengefasst.
1. Teil
Für jede Gruppe ist zuerst die allgemeine Formel mit der Definition der Symbole wiedergegeben. Es folgen dann Beispiele von unter die allgemeine Formel fallenden Verbindungen. Neben dem chemischen Namen jeder Verbindung ist die Bezugsquelle oder ein Literaturhinweis betreffend ein Herstellungsverfahren angegeben. Im Handel erhältliche Produkte sind mit der Abkürzung i. H. bezeichnet und können beispielsweise von den folgenden Firmen bezogen werden: Fluka AG, Buchs (SG, Schweiz), Aldrich Chem. Co., Milwaukee (Wisc., USA), Dr. F. Raschig GmbH, Ludwigshafen a. Rh. (Deutsche Bundesrepublik) oder K & K Laboratoires Inc., Plainview (NY. 11803, USA).
Für die neuen Verbindungen (abgekürzt n. V.) sind im Anschluss an die Aufzählung der Einzelverbindungen Herstellungsmethoden angegeben oder beschrieben.

Die neuen Verbindungen der Stoffklasse II sind wie folgt herstellbar:
Die 2,3-disubstituierten Pyrazine (Formel 1) können nach einer Methode hergestellt werden, die darin besteht, die entsprechenden disubstituierten Dihydropyrazine mittels eines Kupferchromit-Katalysators zu dehydrieren. Die Dihydroparazine können ihrerseits durch Kondensation von Äthylendiamin mit den entsprechenden a-Diketonen erhalten werden.
Diese allgemein anwendbare Methode wird am Beispiel der Herstellung von 2-Methyl-3-äthyl-pyrazin ausführlicher beschrieben.
150 g Äthylendiamin in 500 cc Äther wurden in einem mit Rührwerk, Kühlvorrichtung und Tropftrichter versehenen Dreihalskolben eingeführt. Nach dem Kühlen auf 0 C wurde langsam unter Rühren eine Lösung von 250 g Äthylmethyldiketon in 500 cc Äther zugesetzt. Nach beendeter Zugabe liess man das Reaktionsgemisch sich auf Raumtemperatur er wärmen und erhitzte es dann während einiger Minuten auf dem Wasserbad. Das Reaktionsgemisch trennte sich in zwei Phasen, wovon die wässrige Phase verworfen wurde. Die ätherische Phase wurde über Natriumsulfat getrocknet, worauf das Lösungsmittel abgedampft und der Rückstand bei vermindertem Druck in einer inerten Atmosphäre destilliert wurde. Man erhielt auf diese Weise 192 g des disubstituierten Dihydropyrazins (in 62%iger Ausbeute), Sdp. 61-65 C/
11 mm Hg.
Das Dihydropyrazin wurde in einer Apparatur, wie sie vom Bouveault in Bull. IV, 3, 119 (1908) beschrieben wurde, unter vermindertem Druck in einer Stickstoffatmosphäre in einer Kupferchromit (Girdler G-13) enthaltenden Kolonne destilliert. Der Katalysator wurde elektrisch auf 300 C erhitzt. Das entweichende Reaktionsprodukt wurde durch eine Widmer-Kolonne geleitet, um nichthydrierte Substanzen abzutrennen. Das hydrierte Produkte wurde kondensiert, getrocknet und destilliert. Man erhielt in 90%iger Ausbeute das bei 57" C/10 mm Hg siedende 2-Methyl-3-äthyl-pyrazin.
Dieselbe Methode wie für Verbindung 1 (a) wurde für die Herstellung der folgenden Verbindungen benützt: (1) b. 2-Methyl-3-isobutyl-pyrazin Sdp. 74" C/10 mm

Chem. 27, 1363 (1962) beschriebenen Methode aus 2-Äthyl3-methyl-pyrazin hergestellt. Sdp. 75-80 C/10 mm Hg.
(1) k. 2-Methyl-3(5,6) -[pyrrolyl-( 1 )]-pyrazin. N-Pyrrolyl-lithium wurde durch Umsetzung von 0,242 Mol (15,4 g) Butyllithium (in Form einer 15%gen Suspension in Hexan) mit 0,22 Mol (14,7 g) Pyrrol bei -20" C in 100 ml Tetrahydrofuran hergestellt. Es wurde dann eine Lösung von 0,2 Mol (25,6 g) 3(5,6)-Chlor-2-methyl-pyrazin [erhalten nach der in J. Org. Chem. 26, 2356 (1961) beschriebenen Methode] in 75 ml Tetrahydrofuran bei Raumtemperatur zugesetzt. Das Reaktionsgemisch wurde während 5 Tagen unter Rückfluss erhitzt. Das Reaktionsprodukt wurde nach üblichen Methoden isoliert, gereinigt und schliesslich destilliert. Man erhielt auf diese Weise 2-Methyl-3(5,6)-N-pyrrolyl-pyrazin vom Sdp. 120-124 C/10 Torr.
(1)1. 2-[Thienyl-(2)]-3-methyl-pyrazin. Man kühlt eine Lösung von 0,36 g (0,006 Mol) Äthylendiamin in 3 ml Äther auf 0 C und setzt langsam unter Stickstoff eine Lösung von 0,94 g (0,006 Mol) [Thienyl-(2)1-methyl-diketon (erhalten durch Oxydation von 2-Propionyl-thiophen mit Selendioxyd) in 3 ml abs. Äther zu. Man ersetzt den Äther allmählich durch Benzol und entfernt das Wasser als azeotropes Gemisch mit dem letzteren Lösungsmittel. Man fraktioniert das Reaktionsprodukt und destilliert die bei 85-105 C/ 0,003 Hg siedende Fraktion durch eine auf 350" C erhitzte Kolonne von Kupferchromit (Girdler G-13) hindurch. Man erhält auf diese Weise 2-[Thienyl-(2)]-3-methyl-pyrazin vom Sdp. 94" C/0,03 mm Hg.
(1) q. 2-Isopropenyl-pyrazin wurde aus 2-Äthylpyrazin nach der in J. Org. Chem. 27, 1363 (1962) beschriebenen Methode hergestellt. Das Massenspektrum des Produktes wies Signale bei den Massenzahlen 119 (100%), 120 (81%) und 67 (21%) auf.
(l)r. 2-Methyl-3-vinyl-pyrazin wurde in der gleichen Weise wie die Verbindung (l)q., jedoch aus 2,3-Diäthylpyrazin, hergestellt. Sdp. 66-67" C/13 mm Hg.
(2)b. 2,6-Dimethyl-3-äthyl-pyrazin wurde durch Einführung einer Äthylgruppe in die 3-Stellung des 2,6-Dimethyl-pyrazins nach der in J. A. C. S. 73, 2949 (1951) beschriebenen Alkyllithium-Methode hergestellt. Das so erhaltene Produkt hatte einen Sdp. von 6466 C/8 mm Hg.
(2) c. 2,5-Dimethyl-3-äthyl-pyrazin wurde durch Einführung einer Äthylgruppe in die 3-Stellung des 2,5-Dimethylpyrazins nach der Alkyllithium-Methode (loc. cit.) hergestellt. Das so erhaltene Produkt hatte einen Sdp. von 63 bis 68" C/8 mm Hg.
(2) d. 2,5-Dimethyl-3-propyl-pyrazin wurde durch Einführung einer n-Propylgruppe in die 3-Stellung des 2,5-Dimethyl-pyrazins nach der Alkyllithium-Methode (loc. cit.) hergestellt. Das Produkt wurde durch Massenspektrometrie identifiziert. Es hatte einen Sdp. von 80" C/10 mm Hg.
(2) e. 2,6-Diäthyl-3-methyl-pyrazin wurde durch Einführung einer Methylgruppe in die 3-Stellung des 2,5-Diäthylpyrazins nach der Alkyllithium-Methode (loc. cit.) hergestellt. Das Produkt hatte einen Sdp. von 91-92 C/13 mm Hg.
(2) f. 2,5-Diäthyl-3-methyl-pyrazin wurde durch Einführung einer Methylgruppe in die 3-Stellung des 2,5-Diäthylpyrazins nach der Alkyllithium-Methode (loc. cit.) hergestellt. Das Produkt wurde durch Gaschromatographie isoliert und durch Massenspektrometrie identifiziert.
(2) g. 2,5-Dimethyl-3-butyl-pyrazin wurde durch Einführung einer Butylgruppe in die 3-Stellung des 2,5-Dimethyl-pyrazins nach der Alkyllithium-Methode (loc. cit.) hergestellt. Das erhaltene Produkt hatte einen Sdp. von 91"C/ 9 mm Hg.
(2) h. 2,3-Dimethyl-5-isoamyl-pyrazin wurde durch Einführung einer Isoamylgruppe in die 5-Stellung des 2,3-Dimethyl-pyrazins nach der Alkyllithium-Methode (loc. cit.) hergestellt. Das Produkt wurde mittels Gaschromatographie isoliert und durch Massenspektrometrie identifiziert.
(2) i. 2,5-Dimethyl-3-isoamyl-pyrazin wurde durch Einführung einer Isoamylgruppe in die 3-Stellung des 2,5-Dimethyl-pyrazins nach der Alkyllithium-Methode (loc. cit.) hergestellt. Das Produkt hatte einen Sdp. von 110-120 C/ 13 mm Hg.
(2) j. 2,3-Diäthyl-5-methyl-pyrazin wurde nach der für die Herstellung der Verbindung 11(1) a. beschriebenen Methode hergestellt, indem 1,2-Diaminopropan anstelle von Äthylendiamin und Dipropionyl als das a-Diketon verwendet wurden. Das Produkt hatte einen Sdp. von 79-80 C/12 mm Hg.
(3) i. 2-Methyl-3-butyl-chinoxalin wurde in der gleichen Weise wie die Verbindung (3) d. der Gruppe II hergestellt.
Sdp. 153" C/9 mm Hg.
(3)j. 2-Methyl-3-isobutyl±hinoxalin wurde in der gleichen Weise wie die Verbindung (3) e. der Gruppe II hergestellt. Sdp. 94-95" C.
(4) a. 2-Methylö-äthyl-pyrazin wurde durch Alkylierung von 2,6-Dimethyl-pyrazin nach der in J. Org. Chem. 26, 3379 (1961) beschriebenen Methode hergestellt. Es hatte einen Sdp. von 54-57 C/11 mm Hg.
(4) c. 2,6-Diäthyl-pyrazin wurde durch eine zweite Alkylierung der Verbindung (4) a. nach der oben erwähnten Methode hergestellt. Es hatt einen Sdp. von 70" C bei 10 mm Hg.
(4) d. 2-Methyl-6-vinyl-pyrazin wurde aus 2,6-Dimethylpyrazin mittels der in J. Org. Chem. 27, 1363 (1962) be schriebenen Methode hergestellt. Es hatte einen Siedepunkt von 74-75 C/22 mm Hg.
(5) a. 2,3,5-Trimethyl-6-butyl-pyrazin wurde durch Einführung einer Butylgruppe in die 6-Stellung des Trimethylpyrazins nach einer Methode von Klein et al. (loc. cit.) hergestellt. Das Produkt wurde mittels Gaschromatographie isoliert und durch Massenspektrometrie identifiziert.
(5)b. 2,3,5-Tnmethyl-6-isoamyl-pyrazin wurde durch Einführung einer Isoamylgruppe in die 6-Stellung des 2,3,5 Trimethyl-pyrazins gemäss der Methode von Klein et al. (loc.
cit.) hergestellt. Das Produkt hatte einen Sdp. von 80" C/ 10 mm Hg.
(5) c. 2,5-Dimethyl-3,6-dipropyl-pyrazin wurde erhalten, indem zuerst 3-Oximino-hexanon-(2) durch Umsetzung von Hexanon-(2) mit Nitrosylchlorid nach der in Bull. [3] 31, 1163 (1904) beschriebenen Methode hergestellt wurde.
Durch Autokondensation von zwei Molekülen des Iminoketons in Gegenwart von Zink und Essigsäure [gemäss der in Chimia 11, 310 (1957) beschriebenen Methode] erhielt man 2,5-Dimethyl-3,6-dipropyl-pyrazin vom Sdp. 109-110 C/ 10 mm Hg.
(5) d. 2,5-Dimethyl-3,6-diisopropyl-pyrazin wurde erhalten, indem zuerst 4-Methyl-3-oximino-pentanon-(1) durch Umsetzung von 4-Methyl-pentanon-(2) mit Nitrosylchlorid gemäss der Methode, die in Bull. [3] 31, 1163 (1904) beschrieben ist, hergestellt wurde. Durch Autokondensation von zwei Molekülen des Iminoketons in Gegenwart von Zink und Essisäure [gemäss der in Chimia 11, 310 (1957) beschriebenen Methode] erhielt man 2,5-Dimethyl-3,6-diisopropylpyrazin vom Sdp. 91" C/8 mm Hg.
(5) e. 2,5-Dimethyl-3,6-dibutyl-pyrazin wurde erhalten, indem zuerst 3-Oximino-heptanon-(1) durch Umsetzung von Heptanon-(2) mit Nitrosylchlorid gemäss der in Bull. [3] 31, 1163 (1904) beschriebenen Methode hergestellt wurde.
Durch Autokondensation von 2 Molekülen des Iminoketons in Gegenwart von Zink und Essigsäure [gemäss der in Chimia 11, 310 (1957) beschriebenen Methode] erhielt man 2,5-Dimethyl-3,6-dibutyl-pyrazin vom Sdp. 18 C/0,002 mm Hg.
(5)f. 2,5 -Dimethyl-3 ,6-diisobutyl-pyrazin wurde erhalten, indem zuerst 5-Methyl-3-oximino-hexanon-(2) durch Umsetzung von 5-Methyl-hexanon-(2) mit Nitrosylchlorid gemäss der Methode von Bouveault (loc. cit.) hergestellt wurde. Durch Autokondensation von zwei Molekülen des Iminoketons in Gegenwart von Zink und Essigsäure [gemäss der in Chimia 112 310 (1957) beschriebenen Methode] erhielt man 2,5-Dimethyl-3,6-diisobutyl-pyrazin vom Sdp.
69-70 C/0,01 mm Hg.
(5) g. 2,5-Dimethyl-3,6-diamyl-pyrazin wurde erhalten, indem zuerst 3-Oximino-octanon-(2) durch Umsetzung von Octanon-(2) mit Nitrosylchlorid gemäss der Methode von Bouveault (loc. cit.) hergestellt wurde. Durch Autokondensation von 2 Molekülen des Iminoketons in Gegenwart von Zink und Essigsäure [gemäss der in Chimia 11, 310 (1957) beschriebenen Methode] erhielt man 2,5-Dimethyl-3,6-diamyl-pyrazin vom Sdp. 78" C/0,03 mm Hg.
(5)h. 2,5-Dimethyl-3,6-dihexyl-pyrazin wurde erhalten, indem zuerst 3 -Oximino-nonanon-(2) durch Umsetzung von Nonanon-(2) mit Nitrosylchlorid gemäss der Methode von Bouveault (loc. cit.) hergestellt wurde. Durch Autokondensation von 2 Mol des Iminoketons in Gegenwart von Zink und Essigsäure [gemäss der in Chimia 11, 310 (1957) beschriebenen Methode] erhielt man 2,5-Dimethyl-3,6-dihexylpyrazin vom Sdp. 112120" C/0,01 mm Hg.
(5) i. 2,3,5-Trimethyl-6-hexyl-pyrazin wurde durch Einführung einer Hexylgruppe in die 6-Stellung des 2,3,5-Trimethyl-pyrazins nach der Methode von Klein et al. (loc. cit.) hergestellt. Das Produkt hatte einen Sdp. von 89-91 0,2 mm Hg.
(5)j. 2,5-Dimethyl-3,6-diäthyl-pyrazin wurde durch Alkylierung von 2,5-Dimethyl-3-äthyl-pyrazin nach der in J. A. C. S. 73, 2949 (1951) beschriebenen Alkyllithium Methode hergestellt. Das Produkt hatte einen Sdp. von 83-85 C/8 mm Hg.
(6) a. 2-Äthyl-5-methyl-pyrazin wurde durch Alkylierung von 2,5-Dimethyl-pyrazin nach der in J. Org. Chem. 26, 3379 (1961) beschriebenen Methode hergestellt. Das Produkt hatte einen Sdp. von 60 C/llmm Hg.
(6)b. 2-Isopropyl-5-methyl-pyrazin entstand als Nebenprodukt bei der Herstellung der Verbindung (6) a. und wurde durch Gaschromatographie aus dem Reaktionsgemisch abgetrennt. Die Struktur wurde durch Massenspektrometrie bestätigt.
(6) c. 2,5-Diäthyl-pyrazin wurde durch eine zweite Alkylierung der Verbindung (6) a. nach der für die Verbindung (6) c. beschriebenen Methode hergestellt; es siedete bei 64" C/12 mm Hg.
(6) d. 2-Methyl-5-vinyl-pyrazin wurde aus 2,5-Dimethylpyrazin mittels der in J. Org. Chem. 27, 1363 (1962) beschriebenen Methode hergestellt. Es hatte einen Sdp. von 65-66 C/12 mm Hg.
2. Teil
Die organoleptische Bewertung der Substanzen der Stoffgruppen I und II wurde mittels drei Prüfmethoden A, B und C durchgeführt. Die Methode A diente dazu, den Eigengeschmack der einzelnen Substanzen zu ermitteln. Die geschmacksverändernden Eigenschaften der Substanzen wurden mittels der Methoden B und C ermittelt. Es wurde insbesondere die geschmacksverändernde Wirkung der Prüfsubstanzen (im folgenden Geschmacksstoffe genannt) auf Kaffeeprodukte und speziell auf sprühgetrocknete lösliche Kaffeepulver geprüft.
Methode A
Die Geschmacksstoffe wurden in einem aus einer 65%gen Lösung von Rohrzucker in Leitungswasser bestehenden Zukkersirup gekostet. Die zu prüfenden Geschmacksstoffe wurden dem Sirup in Form von Lösungen von 1 Gew. % oder 1 Gew. /OO in 96 %igem Alkohol zugegeben. Die Konzentration der Geschmacksstoffe im Zuckersirup schwankte entsprechend der Geschmacksintensität zwischen 0,005 und 5 g pro 100 Liter Sirup. Proben des aromatisierten Sirups wurden einer Gruppe von Geschmacksprüfern vorgelegt. Nach dem Kosten der Probeirmusste jeder Prüfer eine Beschreibung des Geschmackes der einzelnen Geschmacksstoffe abgeben.
Methode B
Als Substrat für die Prüfung wurde ein Kaffeegetränk verwendet, das durch Auflösen eines im Handel erhältlichen, sprühgetrockneten Kaffeepulvers in siedendem Wasser im Verhältnis von 1 g Pulver auf 80 ml Wasser hergestellt wurde.
Für jeden zu prüfenden Geschmacksstoff wurde ein Gefäss mit Kaffeegetränk bereitgestellt. Die Geschmacksstoffe wurden dem Kaffeegetränk in Form von Lösungen von 1 Gew. % oder 1 Gew. /OO in 96 %igem Alkohol in Konzentrationen von 0,005 bis 5 g auf 100 Liter Getränk zugegeben. Nach Zugabe der abgemessenen Menge der Geschmacksstofflösung wurde das Kaffeegetränk gut gerührt und sofort in eine Reihe von Tassen für die organoleptische Prüfung gegossen. Das Kosten des Getränkes wurde so rasch als möglich, auf jeden Fall nicht später als 15 Minuten nach der Zubereitung vorgenommen.
Die nur mit einer Kennzahl versehenen gefüllten Tassen wurden in einer Reihe aufgestellt, wobei die erste Tasse eine nichtaromatisierte Vergleichsprobe des Kaffeegetränkes enthielt. Die Geschmacksprüfer mussten feststellen, ob zwischen der Vergleichsprobe und den anderen Proben geschmacklich ein Unterschied bestand oder nicht. Die Prüfer mussten ferner die Geschmacksunterschiede beschreiben und charakterisieren.
Methode C
Als Substrat für die Geschmacksprüfung wurde eine 1,35%ige Lösung eines im Handel erhältlichen, sprühgetrockneten Kaffeepulvers mit verhältnismässig flachem Geschmack und Aroma in Quellenwasser verwendet. Die einzelnen Geschmacksstoffe wurden je einer Portion des Kaffeegetränkes mittels einer Mikrospritze in Mengen von 2 bis 150 Mikroliter zugegeben. Alle für die Zubereitung des Kaffeegetränkes, die Aromatisierung und die Prüfung verwendeten Gefässe und sonstigen Geräte wurden peinlichst gesäubert. Für die Geschmacksprüfung wurden mindestens 5 erfahrene Geschmacksprüfer eingesetzt. Im übrigen wurde gleich wie bei Methode B gearbeitet.
Die Resultate der organoleptischen Prüfungen sind in den nachfolgenden Tabellen I und II zusammengefasst. Die Nummern der Tabellen entsprechen den im 1. Teil beschriebenen Gruppen. In der ersten Kolonne der Tabellen sind die Nummern der einzelnen Verbindungen innerhalb der Gruppen angeführt. Die zweite Kolonne der Tabellen verweist auf die angewendete Prüfmethode. In der dritten Kolonne der Tabellen sind die verwendeten Mengen der Prüfsubstanzen in g pro 100 Liter Getränk (Zuckersirup oder Kaffeegetränk) angegeben.

Das gemeinsame Merkmal der Verbindungen der Gruppen I und II besteht darin, dass sie mehr oder weniger intensive gebrannte oder Röstgeschmacksnoten entwickeln. Die einzelnen Verbindungen weisen zusätzlich noch andere Geschmacksnoten auf.

Obschon mehrere der in den vorangehenden Tabellen aufgezählten Stoffe einen mehr oder weniger unnatürlichen Eigengeschmack oder zumindest einen Geschmack aufweisen, der nicht unbedingt für die Verwendung dieser Stoffe als Aromatisierungsmittel in Nahrungsmitteln und Getränken spricht, haben sich diese Stoffe dennoch als durchaus brauchbar erwiesen, wenn sie als Mischbestandteile zusammen mit anderen Geschmacksstoffen in geeigneten Mischverhältnissen verwendet werden. In den wenigsten Fällen wird man mit einer einzigen Verbindung der Gruppen I und II den gewünschten geschmacksverändernden Effekt erzielen können.
In den meisten Fällen wird man zur Erzielung einer bestimmten geschmacklichen Veränderung von Lebensmitteln oder Getränken Gemische aus zwei oder mehreren der in den vorangehenden Tabellen gekennzeichneten Verbindungen verwenden.
Die geschmacksverändernden Zusätze werden zweckmässigerweise in verdünnter Form, z. B. als verdünnte Lösungen in Alkohol, Triacetin oder in anderen geniessbaren Lösungsmitteln, verwendet, um die genaue Dosierung und die gleichmässige Verteilung in den Lebensmitteln zu erleichtern.
Die erfindungsgemässen geschmacksverändernden Zusätze eignen sich insbesondere zur geschmacksverändernden Behandlung von sogenanntem löslichem Pulverkaffee. Bei der Herstellung solcher Kaffeepulver aus gemahlenem geröstetem Kaffee gehen viele Geschmacks- und Aromastoffe verloren. Die auf dem Markt angebotenen löslichen Kaffeeprodukte liefern Getränke, die, verglichen mit einem aus frisch gemahlenem geröstetem Kaffee gebrauten Kaffeegetränk, geschmacks- und aromaarm sind. Durch Verwendung der geschmacksverändernden Zusätze gemäss der Erfindung ist es nun möglich, die geschmackliche Qualität der löslichen Kaffeepulver wesentlich zu verbessern und ein Aroma zu erzeugen, das dem natürlichen Kaffeearoma viel näher kommt.
Die geschmacksverändernden Mittel können dem löslichen Pulverkaffee beispielsweise durch Aufsprühen einverleibt werden.
Claims (1)
- PATENTANSPRUCHVerwendung von heterocyclischen Verbindungen der nachstehend definierten Gruppen I und II als geschmacksver ändernde Zusätze zu Nahrungsmitteln, Genussmitteln und Getränken mit dem Zweck, gebrannte oder Röstgeschmacksnoten zu erzeugen bzw. zu verstärken: I. Pyridine der Formel EMI6.1 worin Rt, R2 und R3 Wasserstoff, Alkylreste, Alkenylreste, Arylreste oder Aralkylreste bezeichnen, wobei die Symbole Ri, R2 und R3 nicht gleichzeitig alle Wasserstoff darstellen.II. Pyrazine der Formel EMI6.2 worin Rt Wasserstoff, Alkyl, Pyrrolyl-(1) oder Thienyl-(2) und R2 Alkyl oder Alkenyl bezeichnen; EMI6.3 worin Rt, R2 und R3 Alkylreste mit 1 bis 5 Kohlenstoffatomen bezeichnen; EMI6.4 worin R1,R2 und R3 Wasserstoff oder Methyl bezeichnen; EMI6.5 worin Rt und R2 Alkylreste mit 1 bis 3 Kohlenstoffatomen bezeichnen; EMI7.1 EMI7.2 worin R1, R2, R3 und R4 Alkylreste mit 1 bis 6 Kohlenstoffatomen bezeichnen; und worin R1 Methyl oder Äthyl und R2 Alkyl- oder Alkenylreste mit 1 bis 6 Kohlenstoffatomen darst@@@@n.
