Abstract
Die vorliegende Erfindung betrifft ein Verfahren zum intelligenten Erkennen der Qualität eines klimakterischen Obsts oder Gemüses unter Vorbehandlung mittels eines druckbeaufschlagten Inertgases in Kombination mit Lagerung in kontrollierter Atmosphäre, welches zum Bereich intelligenter Erkennung der Qualität von Lebensmitteln gehört. Erfindungsgemäss erfolgt eine wasserstrukturierende Behandlung eines klimakterischen Obsts oder Gemüses innerhalb eines Vorbehandlungssystems mittels eines druckbeaufschlagten Inertgases, wobei eine echtzeitige Online-Überwachung der Umgebungsbedingung der Lagerung in kontrollierter Atmosphäre für Obst oder Gemüse innerhalb eines Lagerungssystems in kontrollierter Atmosphäre und eine Datenerfassung erfolgen, und wobei bei einem Kohlendioxid-Volumenanteil von 5% bis 7% während der Lagerung eines klimakterischen Obsts oder Gemüses, also beim Erreichen des Verderbungspunkts des klimakterischen Obsts oder Gemüses, eine Nachricht zur Aufforderung einer Auslagerung an das Fernüberwachungszentrum gesendet wird. In den 1990er Jahren erzielte die Universität Tokio zufriedenstellende Lagerungswirkung durch druckbeaufschlagte Frischhaltung für Gemüsekohl und Blumen mittels von Xenon. Zhang Min et al. Bei den beiden Patenten besteht jedoch der Nachteil, dass die wasserstrukturierende Behandlung mittels eines Inertgases eine lange Zeit (12 bis 48 Stunden) in Anspruch nimmt und nur in Kombination mit anderem Frischhaltungsverfahren eine offensichtliche Wirkung erzielen kann. Zhang Min et al. (2009) offenbarte ein Verfahren zur kostengünstigen Frischhaltung durch schnelle wasserstrukturierende Behandlung für frisch geschnittenes Obst und Gemüse mittels von Ultrahochdruck (Veröffentlichungsnummer: CN 101 700 055 A), bei dem mittels zweier der vier unpolaren Gase Argon, Krypton, Stickstoff oder Kohlendioxid zu einem Verhältnis von 1:1 eine Ultrahochdruckbehandlung für eine schnelle Strukturierung des Wassers an Oberfläche und in Gewebe frisch geschnittenen Obsts und Gemüses und somit eine reduzierte Aktivität des Wassermoleküls sorgt, wodurch die Lagerzeit frisch geschnittenen Obsts und Gemüses bis zu 10-15 Tagen verlängert wird, wobei bei dieser Patent der Prozessdruck von 300 bis 400 MPa eine grosse Qualitätsminderung für Obst und Gemüse mit weicher Gewebestruktur nachteilig mit sich bringt. Zhang Min et al. (2010) offenbarte ein Verfahren zur Verlängerung der Lagerzeit für frisch geschnittenes Obst und Gemüse unter Behandlung mittels eines Inertgasgemisches beim Mitteldruck (Veröffentlichungsnummer: CN 102 077 859 A), bei dem mittels eins Gasgemisches aus zu einem Verhältnis vermischtem Argon, Stickstoff und Xenon eine Druckbeaufschlagungs-Behandlung bei einem Druck von 20 bis 25 MPa erfolgt, die zu einer Verlängerung der Lagerzeit frisch geschnittenen Obsts und Gemüses um 10 bis 15 Tage bei Kühllagerung und um 7 bis 8 Tage bei Raumtemperaturlagerung beiträgt und offensichtliche Wirkung für Lagerung und Frischhaltung erzielt. Zhang Min et al. (2010) offenbarte ein Kombinations-Frischhaltungsverfahren zur Verlängerung der Lagerzeit für frischen Speise-Lotussamen (Veröffentlichungsnummer: CN 102 057 981 A), bei dem die Qualität und Geschmack des Lotussamens unter Vakuum-Vorkühlung in Kombination mit Dampfbehandlung mittels von 1-MCP, wasserstrukturierender Behandlung mittels eines Inertgases und Frischhaltung in kontrollierter Atmosphäre gut beibehalten werden, wobei die Lagerzeit wesentlich verlängert wird.
