Description

  

  Procédé et installation de stérilisation<B>de</B> liquides.    La présente invention se rapporte<B>à</B> un  procédé pour la stérilisation de liquides, en  particulier de liquides putrescibles et comes  tibles, du lait notamment, ainsi que des émul  sions microbiennes, vaccins, sérums     etc.    et<B>à</B>       une    installation pour l'exécution de ce pro  <B>cédé.</B> Suivant ce dernier, le liquide<B>à</B> stérili  ser est porté rapidement et uniformément par  couche mince<B>à</B> la température de stérilisa  tion, il est ensuite maintenu, pendant     #In     court laps de temps, au moins approximative  ment<B>à</B> cette température et, enfin il est sou  mis<B>à</B> un refroidissement pour être amené<B>à</B>  la température<B>à</B> laquelle il est livré.

   L'ins  tallation pour la réalisation de ce procédé  comporte un appareil de stérilisation par  chauffage rapide pourvu d'un passage<B>à</B> li  quide<B>à</B> surface de contact très étendue par  rapport<B>à</B> la masse de liquide qui le traverse,  cet appareil étant raccordé<B>à</B> un serpentin  maintenu au moins approximativement<B>à</B> la  température de stérilisation et qui est rac  cordé<B>à</B> son tour<B>à</B> un récipient réfrigérant.  



  Le dessin ci-annexé montre,<B>à</B> titre  d'exemple, deux formes d'exécution de cette    installation. Les     fig.   <B>1</B> et 2 sont des vues  schématiques de celles-ci;     fig.   <B>3</B> montre<B>à</B>  plus grande échelle l'appareil de stérilisation  de l'installation selon     fig.   <B>1,</B> représenté en  coupe axiale suivant la ligne     X-X    de     fig.    4,  qui est une vue en plan d'une portion de cet  appareil.  



  Dans la forme d'exécution suivant la       fig.   <B>1,</B> l'installation comporte l'appareil de  stérilisation<B>1,</B> qui sera décrit plus loin en  détail et qui est chauffé de toute façon     ap-          pro-priée    pour porter rapidement<B>à</B> la tempé  rature de stérilisation le liquide qui le     tra     verse. L'appareil<B>1</B> est raccordé<B>à</B> un serpen  tin 4 où le liquide est maintenu, pendant un  court laps de temps,<B>à</B> une température cons  tante voulue, ce serpentin étant<B>à</B> cet effet  logé<B>à</B> l'intérieur d'un autoclave<B>5</B> ou d'un  bain-marie. Le serpentin 4 est enfin raccordé  <B>à</B> un autre serpentin,<B>6,</B> logé dans un réci  pient réfrigérant<B>7.</B>  



  Le liquide qui est introduit dans l'appa  reil<B>1 y</B>     est    porté rapidement<B>à</B> la tempéra  ture<B>de</B> stérilisation et il est maintenu en  suite, pendant un espace de temps variable      selon les cas, mais toujours très court (une  fraction<B>de</B> minute)<B>à</B> ladite température ou  <B>à</B> quelques degrés au-dessous, dans le serpen  tin 4.  



  Le liquide est alors sûrement stérile, et il  peut être distribué après avoir été refroidi<B>à</B>  la température la plus convenable<B>à</B> la dis  tribution, ce qui est effectué pendant son  passage dans le serpentin<B>6.</B>  



  Dans la réalisation pratique du procédé,  il est utile d'effectuer d'abord dans l'installa  tion une circulation d'eau pour régler<B>l'é-</B>  coulement du liquide et équilibrer les tempé  ratures, ensuite d'établir la circulation du  liquide<B>à</B> stériliser (lait par exemple) et en  fin une nouvelle circulation d'eau pour le  lavage immédiat.  



  L'appareil de stérilisation<B>1</B> comporte un  bloc central cylindrique<B>8</B>     (fig.   <B>3),</B> de préfé  rence en acier doux, dont les bases 8a et     8b     présentent chacune une creusure conique 9a  ou 10a dans leur partie centrale avec sommet  émoussé, ces deux creusures coniques étant  opposées par leur sommet.

   Près de la base  de chaque surface, conique 9a ou 10a est pra  tiquée une rigole<B>11</B> de section demi-circu  laire et des canaux 12 (quatre dans l'exem  ple représenté) traversent le bloc<B>8</B> et font  ainsi communiquer entre elles les deux     ri-          ,Gro     <B>,</B> les<B>Il.</B> Les deux surfaces coniques     ga    et  10a du bloc<B>8</B> sont durcies par un procédé  de cémentation et exactement rectifiées<B>à</B>  l'émeri.  



  Contre le bloc<B>8</B> sont appliquées les pla  ques circulaires<B>13</B> et 14 dont chacune pré  sente, d'une part, un cône saillant central       13#%    ou 14a du côté s'adaptant au bloc<B>8</B> et,  d'autre part, un saillant cylindrique circu  laire<B>13b</B> ou 14b, du<B>côté</B> opposé et sur le  <B>même</B> axe.  



  Chaque saillant     l3b    ou 14b est percé d'un  trou taraudé qui est prolongé<B>à</B> l'intérieur de  la pièce<B>13</B> ou 14 par un canal<B>16</B> de dia  mètre réduit et qui aboutit au sommet  émoussé du cône 13a ou 14a.  



  L'angle au sommet des cônes 13a ou     l4a     des pièces<B>13</B> et 14 est le même que celui des  surfaces coniques     ga    et 10a du bloc<B>8</B> et les    surfaces coniques desdites pièces<B>13</B> et 14  sont également durcies par cémentation et  rectifiées<B>à</B> l'émeri.  



  Les pièces<B>13</B> et 14 emboîtent le bloc<B>8</B>  comme représenté et les trois pièces sont  réunies et maintenues serrées ensemble<B>à</B>  l'aide d'une couronne de boulons<B>17</B>     (fig.    4)  passés dans des trous pratiqués<B>à</B> la périphé  rie des plaques circulaires<B>13</B> et 14. Avan  tageusement, l'écartement     entril    ces boulons  ne dépassera par cinq<B>à</B> six centimètres pour  assurer l'étanchéité du joint.  



  Sur le bord des trous<B>à</B> boulon de la pièce  14 se trouve une encoche<B>18</B> dans laquelle  s'engage un ergot<B>19</B> dont est munie chaque  tête de boulon. En interposant entre les faces  planes 8a,<B>13e</B> et<B>8b,</B> 14e des pièces<B>8. 13</B>  et 14, des     disques-garnitures    20 d'épaisseur  uniforme, en papier par exemple, formant en  même temps cales séparatrices,     Ips    surfaces  coniques en saillie     13a    et,     l4a    se trouveront  écartées des surfaces coniques en creux     ga     et     joa    du bloc central<B>8</B> d'une distance uni  forme et proportionnelle<B>à</B> l'épaisseur des       disques-cales    interposés,

   dont le remplacement  par d'autres, plus ou moins épaisses, permet  <B>de</B> donner aux espaces intermédiaires entre  les pièces<B>8, 13</B> et 14 toute largeur voulue  pour le passage du liquide.  



  Il s'ensuit que si par un tuyau vissé au  trou central<B>15</B> de la pièce<B>13</B> on donne  accès<B>à</B> un liquide sous pression, celui-ci tra  verse ledit trou central et pénètre dans l'es  pace formé entre les deux premières surfaces  coniques     ga    et 13a qu'il parcourt en nappe  mince pour se déverser dans la, rigole annu  laire<B>11</B> de la surface conique     ga,    d'où, par  les canaux 12, il atteint la rigole<B>11</B> de l'au  tre surface conique,     loa,    et en parcourant  en nappe mince l'espace qui sépare les deux  surfaces coniques 10a et 14a, il aboutit en  fin au trou central<B>15</B> de sortie de la pièce 14.  



  On comprend que si tout l'appareil est  porté, soit électriquement, soit par circulation  de vapeur ou autre moyen de chauffage,<B>à</B>  une température élevée, le liquide qui<B>y</B>     eir-          cule    prendra rapidement cette température,  par le grand développement des surfaces de      contact en regard de la petite masse liquide  en circulation dans l'unité de temps.<B>Il</B>     sen-          suit    que l'action de chauffage est très rapide  et pourra porter des volumes importants de  liquide<B>à</B> la température de stérilisation en  un temps relativement court.  



  En outre par l'effet du grand développe  ment des surfaces de chauffage de cet appa  reil et de la très faible épaisseur du liquide  qui<B>y</B> circule, les microbes sont aussi soumis  <B>à</B> un contact particulièrement intime avec les  parties chaudes     stérilisantes.     



  En effet, il a. été constaté que les micro  bes sont attirés par adhésion capillaire contre  les surfaces entre lesquelles ils circulent avec  le liquide qui les entraîne.<B>Il</B> en résulte que  les microbes subissent l'action de la chaleur  plus fortement que la massé entière du li  quide, circonstance qui permet d'atteindre  plus facilement le but visé dans quelques cas  et notamment dans la stérilisation du lait,  c'est-à-dire la destruction des microbes et cela  sans modifier, d'une manière générale, sen  siblement le     gout,    la couleur et les propriétés  alimentaires du liquide traité.  



  Lorsque les conditions particulières de       eertaines    stérilisations donnent la possibilité  d'augmenter l'écartement des surfaces     cliauf-          fantes    entre elles au delà d'un     demi-milli-          mètre,    cet appareil de stérilisation peut être  remplacé par un serpentin de chauffage ra  pide, tel que 2 dans l'exemple de la     fig.    2, ce  serpentin ayant une section aplatie, elliptique  de préférence, et étant placé.<B>à</B> l'intérieur  d'une chambre<B>à</B> vapeur, d'un bain-marie  sous pression ou<B>de</B> toute autre cuve de chauf  fage.  



  Naturellement l'appareil de stérilisation       déerit    peut être modifié sans sortir du cadre  de La présente invention.<B>Il</B> pourrait, par  exemple, être constitué par trois plaques rec  tangulaires empilées les unes sur 'les autres  et<I>serrées</I> par une<I>série<B>de</B></I> boulons avec in  terposition de cales séparatrices., par exemple  en papier, de l'épaisseur voulue pour ména  ger un espace libre entre deux plaques adja  centes.
