Back- und Kochapparat. Die vorliegen-de Erfindung betrifft einen Back- und Kochapparat mit zum Aufstellen auf eine Heizvorrichtung dienendem Unter satz, über welchen ein mit Deckel verschliess barer<U>Topf</U> aufgesetzt -werden soll, in dessen Oberteil die Heizgase (Verbrennungsgase oder Heissluft) mittelst eines zentralen Ka mins vom Untersatze aus hineingeführt wer den, um im Topfeberteil die notwendige Ober- hitze-Iiervo,
rzubringen. Von bekannten Baek- und Kochapparaten dieser Art untersrheidet sich nun der Gegenstand der Erfindung vor teilhaft dadurch, dass der Deckel des Topfes als Hohlgefäss ausgebildet ist und durch eine sich nach unten erstreckende, unten offene, zeiitrale-Ausbuchtung mit dem erwähnten zentralen Kamin in der Weise in Verbindung stellt"class,die im Kamin aufsteigen-den Heiz gase in den Hohldeckel eingeleitet werden, um schliesslich beim Umfange des letzteren ins Freie zu.-entweichen. Dabei können Mittel vorgesehen sein,
um die in den Ho'hldeckel gelangenden Heizgase zunächst in den Ober teil des Topfes zu führen,'bevor sie ins Freie entweichen. Die Heizgase könnten aber auch direkt aus dem Halildeckel in Freie entwei chen gelassen werden.
Zum Einlassen ider Heizgase aus dem Hohldeckel in den Topfoberteil können im Boden des Hohlcleckels Öffnungen angebracht sein, und zwar etwa in der Weise, dass dort, wo im Gebrauell das Backgut am weitesten von der-Hilzquelle entfernt ist, sich am mei sten Öffnungen für,den Zutritt der Ileizgase zu dem Oberteil des Topfes befinden, um ein gleichmässiges Bräunen und Backen des Gu tes zu erzielen.
Im Hohlraum des Hohldeckels kann ein in bekannter Weise drehbarer Schieber an geordnet sein, welcher jene Offnangen <B>im</B> Boden des llo'hldeckels beherrscht, um den Eintrift der Heizgase in den Oberteil des Topfes regulieren zu können.
<B>Auch</B> kann der Hohldeckel behufs Rei nigung seines Innenraumes aus -zwei vonein ander trennbaren Teilen gebildet sein.
Auf beiliegender Zeichnung sind ver schiedene Ausführungsbeispiele des Erfin- dun gegeristandes zur Darstellung ge- 9-S bracht.

Fig. <B>5</B> zeigt teilweise eine fünfte Aus- führunggsform, die in Verbindung mit einer Holz- oder Kohlenfeuerung verwendbar ist, und Fig. <B>6</B> zeigt teilweise eine sechste Aus- führting form, ,'s die vorteilhaft mit einer elek- tris(-ben Kochplatte verwendet wird, Der Apparat gemäss Fig. <B>1</B> weist den mit abhebbarem Hohldeckel a, versehenen Topf<B>A</B> auf. Dieser<B>Topf</B> ruht auf dem tel lerartigen Untersatz B.
Wenn der Untersatz P) mit d;em darauf ruhenden Topf<B>A</B> auf ein Grasreelland oder eine andere Heizvorrich- Inn,- aufgesetzt worden ist, überträgt sieh die" an ihn abgegebene IÄTärmei an die im Paume c zwischen Topf<B>A</B> und Untersatz B bpfindliche Luft, -wodurch eine gleichmässige Beheizung des Topfbodens und der zen- Iralen, oben offenen Ausbuchtung e dieses Topfbodens erzielt wird.
Die von der Heiz flamme entströmenden Verbrennungsgase -lei.en dureh die zentrale, oben offene Aus- Iniehtung r des Untersafzes (Untersatz- stufzens) und die zentrale, unten offene -#\.usl)iicl-itun <B><I>f</I></B> des Hohldeckels in den Hohl raum lg des Deckels a, indem die zwei inein- andergreifenden Ausbuchtungen<B>f,</B> r ein zen- Irales Kamin bilden,
das die Heizgase zur 17',i-zieliin" der zum Backen erforderlichen Oberhitze dein 11.oblraum <B>k-</B> des Deckels a ziifiibrt. Die Heizgaso strömen aus dem Deokelhohlraum <B>k</B> durch Öffnungen<B>1</B> im Bodenfeil des Deckels auf das züi backende Gut und entweichen schliesslich ins Freie durch die Löcher b des Deckelrandes Lind entsprechende Löcher des Topfrandes.
Die Offnungün <B>1</B> sind zweckmässigerweise an jener Stelle ain zahlreichsten angeordnet, wo das Gebäck am meisten Hitze benötigt, das heisst in der i\"-,Ilie der Peripherie des Appa- rafes. Dadur2 wird ein gleichmässiges Baehen und Bräunen des Backwerhes erzielt. Der Deekel a ist oben doppelwandig, damit die Wärme aus dem Hohlraume<B>k</B> weniger entweichen kann.
Damit ein zu starkes Backen um die Topfausbuchtung e herum vermieden wird, ist die Deckelausbuehtung von einem Rohr h umgeben und der Raum i 2-wischen <B>f</B> und h mit Isoliermaterial, wie zum Beispiel Asbest, imgefüllt. Der Unter- sa47 B hat einen ringförmigen Fuss<B>d,</B> der #-1 tD ein Hindernis für die Ablenkung der Reiz gase bieten soll.
Ferner weist der Unter satz B Löcher u auf, damit die im Raume c befindliche heisse Luft entweiehen und sieb erneuern kann, wodurch ein züi starkes Be heizen des Topfbodens vermieden. wird.
Bei der Ausführung nach Fig. 2 ist der Untersatz B' unten flach. Er hann aus Eternit oder aus einem andern Isoliermate rial bestehen. Nahe bei seinem Rande sind Bolzen d' angebraeht, auf denen der Topf<I>A</I> atifruht, wodurch ein am Umfang offener Luftraum e' entsteht. Der Entersatzstutzen It' ist nach oben verlängert und weist eine mit Isoliermasse i' ausgefüllte Doppelwand auf.
Die Topfbodenausbuchtung e' ist der art- verlängert" dass sie bis in den.H.ohlraum <B>k</B> des Deckels a reieht. Dagegen ist die Bodenausbuchtung<B>f'</B> des Deckels<B>a</B> ver kürzt.
Zur Regulierung der Oberhitze ist im Deckelhohlraum ein drehbarer, durchlochter Schieber o angeordnet, der mittelst eines Knopfes<B>p</B> derart gedreht werden kann, dass die Offnungen <B>1</B> ganz oder teilweise durch denselben verschlossen werden können, um eine kleinere oder stärkere Bräunung des Crebäches zu erzielen.<I>M,<B>N</B></I> bezeichnen fel- lerartige, aufeinandergestellte Einsätze. Diese Einsätze unterteilen das Innere des Topfes <B>A</B> derart, #dass jebr dieser Einsätze für sieh <B>zum</B> Bachen, eines Kuiehens dienen kann.
Durch die Löcher z und die Leerräume<B>y</B> kömien die sich entwickelnden Dämpfe aus diesen Einsätzen in den Topf<B>A</B> gelangen. Diese Einsätze sind<B>so</B> bemessen, dass im Verlaufe des Backprozesses ein Auswechseln derselben untereinander leicht möglich ist, n so dass der obere Einsatz zu unterst und der unterste zu oberst gebracht werden kann, damit alle Kuchen gleichmässig gebacken werden können.
Fig. <B>3</B> zeigt einen Apparat mit einem riligf örmigen, mittelst eines abliebbaren Deckels s verscliliessbaren, zum Kochen und Bachen von Puddings bestimmten Einsatz gefäss K kombiniert, das an seinem Boden einerseits mit einer sieh nach oben erstrecken den Ausbuchtung v versehen ist und ander seits einen Fuss<B>1</B> aufweist, dainit die beiden Bodeiiflächen des Topfes<B>A</B> und des Gefässes <B><I>IC</I></B> sieh nicht auf grosser Fläche berühren. Der Fuss t verhindert ein Anbrennen des Bachmaterials im Gefäss K und ermöglicht das Backen im Wasserbad und teils in Heiss luft.
Beim Backen von Puddings im Wasser bad befindet sich im Unterteil des Topfes<B>A</B> eine Wassermenge t', durch welche der äussere Umfang des Einsatzes erhitzt wird, Puddings während sein im Fuss Einsatzgefäss t die zum Kochen erforderliche eines -\Ä>T-*i,rme sowohl durch die Seitenwand von K, s durch die Bodenausbuchtunm v zuführt.
Der Untersatz B' mit Stutzen r ist in dieser Ausführungsform. so ausgestaltet, dass der Topf<B>A</B> im Untersatz eine Zentrierung er hält und dass er beim Baeken zum Teil mit Wasser e' gefüllt werden kann, um einer seits eine Verzögerung des Bachprozesses auf dem Boden des Topfes<B>A</B> herbeizuführen und anderseits bei Verwendung einer elek- frischen Kochplatte als Heizquelle ein Zuheisswerden dieser Kochplatte beim Bak- hen züi vermeiden.
Der offene Untersatz B' weist Löcher te' auf, damit die Dämpfe ent- weicheri können. Die Gase gelangen hier durch im Umfang des Hohldeckels a ange brachte Löcher direkt ins Freie, ohne mit.- clem Backmaterial in Berührung zu kommen, da hier der Deckelboden im Gegensatz zu Fig. <B>1</B> und 2 keine Öffnungen aufweist. Der die Ausbuchtung f2 aufweisende Deckelteit hann fest oder abhebbar mit dein. übrigen Deckelteil verbunden sein.
Falls beide Deckelteile voneinander trennbar sind, so ist eine bequeme Reinigung des Hohldeckel- raunies ermöglicht.
Fig. 4 zeigt eine Auslührungsforin zum Bachen von Frucht- und Konfektkuchen usw. Da für diese Kuchenform der Durch messer möglichst gross sein muss und deshalb' das zu backende Material an der Peripherie des auf dem Stutzen r versehenen Unter satz B' ruhenden Topfes<B>A</B> verhältnismässig weit von der Hitzquelle entfernt ist, könnte ein unggleichmässiges Backen stattfinden.
Um einen Ausgleich herbeizuführen, sind einer seits die Öffnungen<B>e</B> im Ilohlraume <B>k</B> des mit der unten offenen Ausbuchtung<B>f'</B> ver- sehenen Ilohldeckels a, durch welche die Reizgase aus dem Deckel in den obern Topf raum eintreten, nicht nur an der von der Hitzquelle am weitesten entfernten Stellen angeordnet, sondern es ist auch der Hohl raum k nach seinem äussern Rande zu ver engt.
Ausserdem ist der Hohldeckel a hier zu demselben Zwecke derart ausgebildet, dass sein Umfangsteil näher zum Baekraum bezw. im Gebrauch näher an das zu backende Gut zu liegen kommt als sein zentraler Teil.
Bei der teilweise durch. Fig. <B>5</B> dargestell ten Ausführungsforin dringen die von einer Feuerung herkommenden ITeizgase durch Öffnungen x in einen tellerförmigen Unter satz B', und es gelangen die Heizgase direkt aus demselben in die Einbuchtung e des Kochtopfes, in welche die nach unten ge richtete, unten offene Ausbuchtung des hier nicht dargestellten Topfhohl,deckels hinein reichen soll.
Bei der teilweise durch Fig. <B>6</B> clarge- stellten Ausführungsforin hat der teller artige Untersatz B' seit-liehe Öffnungen Ü2 und ist zum Aufstellen auf eine elektrische Kochplatte bestimmt. Die im Untersatz B' erzeugte heisse Luft dringt durch die oben offene Ausbuchtung des Topfbodens und die unten offene Ausbuchtung des nicht dar- t' (restellten hohlen Topfdeckels in den Hohl- rainix des letzteren hinein.
