Abstract
La presente invención se refiere a un hidrolizado obtenido hidrolizando un sustrato que comprende al menos una proteína animal no láctea por una bacteria Bacillus natto de grado alimenticio en un ambiente de contenido de sal de menos de 2% en peso. La presente invención se refiere además a un procedimiento para producir un hidrolizado, que comprende las etapas de a) mezclar un sustrato con una bacteria de alimentos grado, y b) incubar la mezcla de la etapa a) en condiciones de contenido de% de sal de menos de 2 en peso, en el que el sustrato comprende al menos una proteína animal. El hidrolizado o el hidrolizado obtenible a partir del proceso de acuerdo con la presente invención es superior en sabor, aroma, textura y valor nutritivo, y se pueden usar o procesan adicionalmente para obtener un producto alimenticio.The present invention relates to a hydrolyzate obtained by hydrolyzing a substrate comprising at least one non-dairy animal protein by a food grade Bacillus natto bacterium in an environment of salt content of less than 2% by weight.
