Abstract
<p>LA PRESENTE INVENCIÓN SE REFIERE A UN MÉTODO PARA LA ELABORACIÓN DE UN EXTRACTO HIDROSOLUBLE EN BASE A UNA BIOMASA VEGETAL DE LA FAMILIA DE LA MELISSA OFFICINALIS, CUYO EXTRACTO ES UTILIZADO COMO SUSTITUTO DE SULFITO EN EL PROCESO DE ELABORACIÓN DE VINOS DESCRITO ANTERIORMENTE, CUYO MÉTODO CONSTA DE UNA O MÁS DE LAS SIGUIENTES ETAPAS: A) COSECHA DE LA HIERBA, B) SECADO DE LA HIERBA OBTENIDA EN LA ETAPA A), C) EXTRACCIÓN DE LA HIERBA SECA OBTENIDA EN LA ETAPA B), DONDE DICHA ETAPA DE EXTRACCIÓN C) COMPRENDE AL MENOS DOS SUBETAPAS, UNA PRIMERA SUBETAPA QUE COMPRENDE UNA PRIMERA ETAPA DE EXTRACCIÓN CON AGUA, DONDE LA FASE ACUOSA OBTENIDA FUNCIONA COMO EL MATERIAL DE PARTIDA PARA LA SEGUNDA SUBETAPA QUE COMPRENDE UNA ETAPA DE EXTRACCIÓN CON UN DISOLVENTE ORGÁNICO, DONDE LA FASE ACUOSA SE ACIDIFICA ANTES DE LA SEGUNDA ETAPA DE EXTRACCIÓN.</p>
