<p>DE ACUERDO CON LA PRESENTE INVENCIÓN, SE PROPORCIONA UNA COMPOSICIÓN QUE COMPRENDE CÉLULAS DE LEVADURA Y AL MENOS UN POLIFENOL CON UN PESO MOLECULAR SUPERIOR A 620 DA, LOS POLIFENOLES SE ADSORBEN Y SE RETIENEN EN EL CITOPLASMA DE LA CÉLULA DE LEVADURA. DE ACUERDO CON LA PRESENTE INVENCIÓN, SE PROPORCIONA UN USO DE LA COMPOSICIÓN AQUÍ DESCRITA EN CAMPOS COSMÉTICOS, DERMATOLÓGICOS, NUTRICIONALES Y / O FARMACÉUTICOS. DE ACUERDO CON LA PRESENTE INVENCIÓN, SE PROPORCIONA UN USO DE LA COMPOSICIÓN EN LA VINIFICACIÓN PARA PROTEGER AL VINO DE LA OXIDACIÓN, PRESERVANDO ASÍ LA CALIDAD, EL COLOR Y LOS AROMAS DEL VINO.
