Abstract

<p>La invención se relaciona a un proceso para preparar un extracto de chícharos que comprende fibras, el proceso que comprende las siguientes etapas: llevar los chícharos pelados en contacto con una solución acuosa con el fin de formar una composición acuosa que comprende chícharos: dejar los chícharos hidratarse en a composición acuosa por al menos 30 minutos ya lo más 15 horas; moler los chícharos con el fin de obtener como resultado chícharos molidos; y fraccionar los chícharos molidos con el in de obtener por lo menos un extracto de chícharos que comprende fibras. La invención también se relaciona a un extacto de chícharos que pjede ser obtenido de acuerdo al proceso de la invención. La invención también se relaciona a una composición comestible que comprende el extracto de chícharos de acuerdo a la invención.</p>
