Abstract

<p>La presente invención se refiere a una composición que comprende aceite vegetal, caramelo y uno o más compuestos fenólicos. El caramelo y dichos uno o más compuestos fenólicos juntos impiden la oxidación del aceite vegetal, de manera que la cantidad de EDTA en la composición se puede reducir. El caramelo se ha calentado de manera que no imparta un color oscuro a la composición. La invención, además, se refiere a un método para preparar la composición. Finalmente, la invención se refiere al uso del caramelo y uno o más compuestos fenólicos para disminuir la oxidación del aceite vegetal.</p>
