本发明公开了一种墨鱼仔品质改良剂,由按质量百分比含量计的如下成分组成:碳酸氢钠3~4%,食盐1~2%,葡萄糖酸内酯0.3~0.5%,海藻糖2~4%,余量为水,且pH为9~10。本发明还公开了一种采用所述墨鱼仔品质改良剂对冷冻墨鱼仔进行品质改良的方法。本发明的墨鱼仔品质改良剂,采用无磷原料配方,能够对墨鱼仔进行固化定型和嫩化保水,显著提升了墨鱼仔的外形饱满度、爽脆口感和海鲜风味;本发明的冷冻墨鱼仔品质改良方法,将墨鱼仔的固化定形和嫩化保水两个工序步骤一步完成,简化了生产工序,生产时间缩短50%以上,易于实现工业化、规模化生产。

本发明涉及冷冻水产品加工技术领域,具体涉及一种墨鱼仔品质改良剂及冷冻墨鱼仔品质改良方法。
背景技术
墨鱼,又称墨斗鱼、乌贼,十腕目乌贼科软体动物,主要分布于我国东南沿海,产量丰富。墨鱼仔是一种特殊的水产品,体型较小,味道鲜美、营养丰富,深受消费者喜爱,但墨鱼仔宰杀处理较麻烦。因此,将墨鱼仔加工成适合餐饮、家庭消费需求的方便食用的预制冷冻水产食品具有广阔的市场和经济效益。
对墨鱼仔加工要求产品体型完整、圆润饱满,一般不分割切片。目前,去皮去内脏的冷冻预制产品是墨鱼仔的主要加工产品形式。但去皮去内脏处理后的墨鱼仔外形软塌不饱满、腥味较重且口感较差,因此需要进行相关预处理改善其外形、气味和口感。目前,生产上墨鱼仔去皮去内脏后通常需要采用高浓度盐水(4~5%)进行较长时间盐磨或用固化剂对墨鱼仔进行固化定形,然后再用磷酸盐等保水剂对固化定型后的墨鱼仔进行长时间(10~12h)嫩化保水处理,耗时较长,操作较为麻烦。因此,开发能有效提升墨鱼仔品质的品质改良剂和优化工艺以简化操作、提高效率具有十分重要现实意义。
目前,关于墨鱼冷冻保鲜和品质改良方法的文献报道较少。公开号为CN1363240A的专利“天然盐渍墨鱼片的生产方法”公开了一种利用盐和明矾对墨鱼片进行整形、盐渍的工艺,但是由于明矾对人体健康有危害,明矾被禁止使用为食品添加剂。公开号为CN102960784A的专利“一种冻墨鱼的加工方法”公开了一种利用5%冰盐水浸泡15~30分钟进行腌制保鲜和提升墨鱼片鲜味的方法,应用对象是墨鱼片,不涉及墨鱼仔外形固化定型问题。
磷酸盐为水产品加工中应用比较广泛的保水剂,然而人体长期过量摄入会影响人体的钙磷平衡,影响人体健康。因此研究开发安全高效的无磷保水剂十分必要。公开号为CN104430807A的专利“一种带皮鱿鱼无磷保水剂及其使用方法”公开了一种带皮鱿鱼的无磷保水剂,该方法主要针对带皮鱿鱼在0~4℃冷藏下的保水效果。公开号为CN104222254A的专利“一种脱皮鱿鱼的无磷保水剂及其使用方法”公开了一种脱皮鱿鱼的无磷保水剂,该方法需要浸泡24h,浸泡时间较长,加工效率较低。公开号为CN108967511A的专利“一种巨枪乌贼保水处理方法”公开了一种以碳酸氢钠、D-异抗坏血酸钠、茶多酚等七种物料复配保水剂的方法;公开号为CN104996539A的专利“一种鱿鱼保水剂及其制备方法、应用”公开了一种以海藻寡糖、酪蛋白酸钠、葡萄糖酸钠等七种物料复配保水剂的方法;这些无磷保水方法主要为复配保水处理,配方组分较多,处理时间较长,原料不针对墨鱼仔,更不涉及水产品形体固化定形方面。

本发明要解决的技术问题是提供一种能够对墨鱼仔进行固化定型和嫩化保水的墨鱼仔品质改良剂。
为了解决上述技术问题,本发明提供了如下的技术方案:
第一方面,本发明提供了一种墨鱼仔品质改良剂,由按质量百分比含量计的如下成分组成:碳酸氢钠3~4%,食盐1~2%,葡萄糖酸内酯0.3~0.5%,海藻糖2~4%,余量为水,且pH为9~10。
优选地,由按质量百分比含量计的如下成分组成:碳酸氢钠3%,食盐1.2%,葡萄糖酸内酯0.4%,海藻糖3%,余量为水。
第二方面,本发明提供了一种冷冻墨鱼仔品质改良方法,包括以下步骤:
(1)将墨鱼仔去除牙齿、内脏和外皮,冰水清洗干净;
(2)将洗净的墨鱼仔于4~10℃的浸渍液中搅拌30~40min;
(3)搅拌后于0~4℃继续浸泡4~6h;
(4)冰水漂洗,沥干;
(5)将沥干后的墨鱼仔单体快速冻结至中心温度为-18℃以下;
(6)冻结好的墨鱼仔用0~4℃冰水镀冰衣;
(7)定量称重后装袋,封口;
(8)将封口后的墨鱼仔于-18℃以下冷库中冻藏;
其中,所述浸渍液由按质量百分比含量计的以下成分组成:碳酸氢钠3~4%,食盐1~2%,葡萄糖酸内酯0.3~0.5%,海藻糖2~4%,余量为水。
进一步地,步骤(1)中,所述墨鱼仔为55~65g/只。
进一步地,步骤(2)中,所述墨鱼仔与浸渍液的质量比为1:1~1.5。
进一步地,步骤(2)中,将墨鱼仔于所述浸渍液中顺时针搅拌,转速为60~80rpm/min。
进一步地,步骤(6)中,镀冰量为10~15%。
与现有技术相比,本发明的有益效果在于:
1.墨鱼仔由于表层和内层存在一层薄膜,熟制后会非常硬,十分影响口感。本发明通过在品质改良剂中加入浓度为0.3~0.5%的葡萄糖酸内酯,从而能够软化墨鱼仔表层和内层的薄膜,解决了墨鱼仔产品表面硬化影响口感的问题;其次,在品质改良剂中加入了3~4%的碳酸氢钠和1~2%的食盐,一方面通过改变体系pH和离子强度使墨鱼仔蛋白亚基结构发生改变,暴露更多肌动蛋白和肌球蛋白结合位点,促进肌动球蛋白复合体形成,同时内部微环境pH和离子强度的改变也会激活肌球蛋白头部ATP酶活,促使肌肉粗丝和细丝的结合,起到对墨鱼仔固化定型的作用;另一方面通过添加适度盐、碳酸氢钠和葡萄糖酸内酯调控体系离子强度和维持弱碱pH(9-10),从而增强蛋白结合水的能力,达到保水嫩化和调味作用;再次,通过添加2~4%的海藻糖,在增强墨鱼仔抗冷冻变性的同时,提高了墨鱼仔的鲜味。
2.本发明的墨鱼仔品质改良剂,采用食品中无限量添加要求的无磷食品配料,食用安全性高;通过对碳酸氢钠、食盐、葡萄糖酸内酯和海藻糖不同组分配方的优化研究和不同组分间的协同作用,显著提升了墨鱼仔的外形饱满度、爽脆口感和海鲜风味。
3.本发明的冷冻墨鱼仔品质改良方法,通过使用特殊的品质改良剂,从而将墨鱼仔去皮去内脏后固化定形和嫩化保水两个工序步骤一步完成,简化了生产工序,生产时间缩短50%以上;同时制得的墨鱼仔产品色泽剔透、形状圆润饱满、口感Q弹爽脆、无腥味异味且极大地保留了海鲜味。
4.针对市场上现有冷冻墨鱼仔产品多以块冻为主,本发明采用了单体冻结和镀冰衣的方式使得冻结好的墨鱼仔不粘结在一起,有利于维持墨鱼仔冻藏期间的品质稳定性,进一步提升产品品质,同时方便食用。
5.本发明的墨鱼仔品质改良剂及冷冻墨鱼仔品质改良方法,弥补了现有技术的不足,加工工艺简单合理,易于实现工业化、规模化生产,市场前景广阔。

下面结合附图和具体实施例对本发明作进一步说明,以使本领域的技术人员可以更好地理解本发明并能予以实施,但所举实施例不作为对本发明的限定。
除非另有定义,本文所使用的所有的技术和科学术语与属于本发明的技术领域的技术人员通常理解的含义相同。本文中在本发明的说明书中所使用的术语只是为了描述具体的实施例的目的,不是旨在于限制本发明。本文所使用的术语“及/或”包括一个或多个相关的所列项目的任意的和所有的组合。
下述实施例中所使用的实验方法如无特殊说明,均为常规方法,所用的材料、试剂等,如无特殊说明,均可从商业途径得到。
实施例及对比例
1.配制墨鱼仔品质改良剂
按照表1所示的配比,将各组分溶于水中,搅拌至各组分溶解,得到墨鱼仔品质改良剂。

2.冷冻墨鱼仔品质改良
采用上述实施例及对比例配制的品质改良剂对冷冻墨鱼仔进行品质改良,具体包括以下步骤:
(1)选取墨鱼仔(约55~65g/只),去除牙齿、内脏和外皮,冰水清洗干净;
(2)将洗净的墨鱼仔按1:1~1.5置于4~10℃浸渍液中顺时针慢速搅拌30min,转速60~80rpm/min;所述浸渍液为上述实施例及对比例配制的墨鱼仔品质改良剂;
(3)搅拌后于0~4℃浸泡6h;
(4)冰水洗净,沥干;
(5)单体快速冻结至中心温度为-18℃;
(6)冻结好的墨鱼仔用0~4℃冰水镀冰衣,镀冰量在10~15%;
(7)定量称重后装入塑料包装袋,封口;
(8)将所述墨鱼仔于-18℃以下冷库中冻藏。
墨鱼仔质量测试
1、浸泡增重率及蒸煮损失率
墨鱼仔去除内脏、牙齿和外皮,洗净沥干后称重,质量记为W1;经过浸泡处理后,洗净沥干后称重,质量记为W2;则浸泡增重率X1=(W2-W1)/W1*100%。
经过处理的墨鱼仔产品解冻后称重,质量记为W3,沸水煮制1.5min后称重,质量记为W4;则蒸煮损失率X2=(W3-W4)/W3*100%。

水分对食品的质量和风味有着非常重要的作用,是保持食品感官质量和食用品质的基本条件。肉的保水性是肌肉保持其原有水分和添加水分的能力,是用来衡量肉的经济效益和食用价值的重要参数之一,而浸泡增重率和蒸煮损失率是反映肉的保水性的典型指标。
根据表1结果可知,冰水浸泡的墨鱼仔(对比例4)在浸泡后略有增重,但蒸煮损失率高,1.2%盐水浸泡的墨鱼仔(对比例3)的浸泡损失和蒸煮损失率均较高。较高浓度的食盐(对比例6)导致蛋白渗透压增加,浸泡增重率略下降,蒸煮损失略增加;同样过量添加葡萄糖酸内酯(对比例8)导致体系pH下降,蛋白持水性降低。而经实施例1-3的品质改良剂处理的墨鱼仔,虽然浸泡后重量略有损失,但是蒸煮损失率却大大下降,这表明其具有较好的保水性,因此有利于提高墨鱼仔的外形饱满度、口感和风味。
2、质构
对实施例1-3及对比例1-4制备的墨鱼仔沸水煮制1.5min后进行质构测试。测试方法为:
将墨鱼仔切成1cm*1.5cm的小块,利用物性分析仪测试其质构和剪切力。墨鱼仔的硬度、弹性和咀嚼性的测试条件为圆柱型测试探头p/25;测试前速度:5mm/s;测试速度:1mm/s;测试后速度:5mm/s;压缩形变:50%;触发力:5g。墨鱼仔的剪切力测试条件为测试速度:1mm/s;压缩比:50%触发力:5g。测试结果如表3所示。

从表3的结果可以看出,仅用冰水浸泡的墨鱼仔(对比例4)具有较小的硬度、咀嚼度和剪切力。相对于冰水浸泡,添加1.2%盐浸泡(对比例3)一定程度上提高了墨鱼仔的硬度、咀嚼性和剪切力。经对比例1-2的品质改良剂处理的墨鱼仔具有较高的硬度、咀嚼性和剪切力。由对比例可知,碳酸氢钠、葡萄糖酸内酯、盐和海藻糖均对墨鱼仔质构品质的改善具有重要作用。而经实施例1-3的品质改良剂处理的墨鱼仔,其硬度、弹性、咀嚼性和剪切力俱佳。因此,本发明的品质改良剂处理可以有效改善墨鱼仔的质构品质,从而有利于提高冷冻墨鱼仔的口感和风味。
3、感官测试
评定小组由12名(6男6女,年龄均在20-35岁之间)受过专业培训的感官评定人员组成。对解冻后的样品进行外观和气味评定,对沸水煮制1.5min的样品进行外观、滋味、气味和口感进行感官评定,评定标准见表4,评定结果见表5。

根据感官评分结果可知,不添加海藻糖的墨鱼仔(对比例1)的滋味和气味品质下降,不添加葡萄糖酸内酯浸泡的墨鱼仔(对比例2)由于表皮较硬而使口感大幅度下降,但过量添加葡萄糖酸内酯(对比例8)导致肉质软面。冰水浸泡的墨鱼仔(对比例4)外观、滋味、气味和口感均较差。相对于冰水浸泡,2%盐水浸泡(对比例3)提升了墨鱼仔的气味和滋味,但当盐含量过高(对比例6)导致产品咸味过重,滋味显著下降;过量添加碳酸氢钠(对比例5)会导致肉质软化、不够Q弹、碱味过重,影响墨鱼仔的气味和口感,而实施例制备的墨鱼仔,由于同时添加了碳酸氢钠、食盐、葡萄糖酸内酯和海藻糖,使得其外观、滋味、气味和口感俱佳。其中,添加3%碳酸氢钠、1.2%食盐、0.4%葡萄糖酸内酯、3%海藻糖浸泡6h的墨鱼仔(实施例1)具有最佳的感官品质。
4、处理后墨鱼仔图
请参见图2-3,未经品质改良剂浸泡前,墨鱼仔外形软塌;冰水浸泡的墨鱼仔外形软塌且不够圆润,用盐水浸泡的墨鱼仔肉质不够饱满,且墨鱼须发生卷曲。而经实施例1的品质改良剂浸泡的墨鱼仔,外形圆润饱满,这表明本发明的品质改良剂,能够对墨鱼仔进行良好的固化定型,且嫩化保水的效果好。

Claims (7)
1.一种墨鱼仔品质改良剂,其特征在于,由按质量百分比含量计的如下成分组成:碳酸氢钠3~4%,食盐1~2%,葡萄糖酸内酯0.3~0.5%,海藻糖2~4%,余量为水,且pH为9~10。
2.如权利要求1所述的一种墨鱼仔品质改良剂,其特征在于,由按质量百分比含量计的如下成分组成:碳酸氢钠3%,食盐1.2%,葡萄糖酸内酯0.4%,海藻糖3%,余量为水。
3.一种冷冻墨鱼仔品质改良方法,其特征在于,包括以下步骤:
(1)将墨鱼仔去除牙齿、内脏和外皮,冰水清洗干净;
(2)将洗净的墨鱼仔于4~10℃的浸渍液中搅拌30~40min;
(3)搅拌后于0~4℃继续浸泡4~6h;
(4)冰水漂洗,沥干;
(5)将沥干后的墨鱼仔单体快速冻结至中心温度为-18℃以下;
(6)冻结好的墨鱼仔用0~4℃冰水镀冰衣;
(7)定量称重后装袋,封口;
(8)将封口后的墨鱼仔于-18℃以下冷库中冻藏;

4.根据权利要求3所述的一种冷冻墨鱼仔品质改良方法,其特征在于,步骤(1)中,所述墨鱼仔为55~65g/只。
5.根据权利要求3所述的一种冷冻墨鱼仔品质改良方法,其特征在于,步骤(2)中,所述墨鱼仔与浸渍液的质量比为1:1~1.5。
6.根据权利要求3所述的一种冷冻墨鱼仔品质改良方法,其特征在于,步骤(2)中,将墨鱼仔于所述浸渍液中顺时针搅拌,转速为60~80rpm/min。
7.根据权利要求3所述的一种冷冻墨鱼仔品质改良方法,其特征在于,步骤(6)中,镀冰量为10~15%。
