Abstract

La invencion tiene por objeto un procedimiento que permite retardar el inicio de la maduracion de platanos, manteniendo al mismo tiempo adecuadas caracteristicas organolepticas y de calidad. El procedimiento se lleva a cabo en una atmosfera modificada no controlada, a una temperatura comprendida entre 12 C y 22 C, bajo presion atmosferica , donde se introduce protoxido de nitrogeno puro el cual se mezcla con aire de ventilacion hasta obtener una concetracion de protoxido de nitrogeno comprendida entre 40 y 60%, y una concetracion de oxigeno comprendida entre 12% y 8%, respectivamente, segun sea la concentracion de protoxido.The object of the invention is a process that allows delaying the onset of ripening of bananas, while maintaining adequate organoleptic and quality characteristics. The process is carried out in a modified uncontrolled atmosphere, at a temperature between 12 C and 22 C, under atmospheric pressure, where pure nitrogen protoxide is introduced which is mixed with ventilation air until obtaining a protoxide concetration of nitrogen between 40 and 60%, and an oxygen concentration between 12% and 8%, respectively, depending on the concentration of protoxide.
