Abstract
Un metodo para tratar los frutos del cafe con o sin pulpa, comprendiendo el paso de contacto de los frutos del cafe con una solucion de una composicion seleccionada del grupo que consiste en composiciones organicas o inorganicas que liberan cloro, tales como oxicloruro de calcio, acido dicloroisocianurico y las sales de sodio y potasio, acido tricloroisocianurico diluidos en un vehiculo liquido, por un periodo de tiempo suficiente para desinfectar la piel, pulpa y granos del cafe, evitar fermentacion de los mismos y neutralizar composiciones quimicas metabolicas que son perjudiciales al sabor, aroma y grado de acidez del cafe y a su calidad.A method for treating coffee fruits with or without pulp, comprising the passage of contact of coffee fruits with a solution of a composition selected from the group consisting of organic or inorganic compositions that release chlorine, such as calcium oxychloride, acid dichloroisocyanuric and sodium and potassium salts, trichloroisocyanuric acid diluted in a liquid vehicle, for a period of time sufficient to disinfect the skin, pulp and grains of coffee, avoid fermentation thereof and neutralize chemical chemical compositions that are harmful to taste, aroma and degree of acidity of coffee and its quality.
