Abstract

The solution concerns a method of food fibrous material production from sugar beet pulps. The said purpose is achieved by a way that the sugar beet pulps get freed from sugar residues and soluble salts by washing them in drinking water, and then a disinfection as well as whitening by hydrogen peroxide or persterile solutions or ozonisation, possibly only steam disinfection or irradiation is made. By the pressing and subsequent drying, the water is removed until the moisture content drops under 10 mass %. The food fibrous material enables the compensation of the fibrous material deficit in the current human alimentation.

Description

The invention relates to a process for the production of pulp for food use.

Fiber is an important component in human nutrition. In the course of the civilization process and changes in human nutrition, the dietary fiber content gradually decreased. Recently, it has been shown that the lack of a fibrous component in the diet is not only the cause of frequent digestive tract problems, but also the cause of some diseases. Lack of fiber in the diet should therefore be supplemented by an additional addition of specially made dietary fiber.

Fiber is to a greater or lesser extent present in all plants, but obtaining it in the desired concentrated form is either difficult or uneconomical. In addition, the fiber obtained must comply with food safety requirements.

Jedním z možných zdrojů vlákniny jsou vyslazené řepné řízky, které obsahují až 67 %hmot. dietní vlákniny a až 22\hmot. pektinových látek, okolo 10 %hmot. bílkovin. Vysoký obsah přítomných pektinových látek působí významně při rozkladu tuků a sacharidů, tzn. snižuje obsah cholesterolu v krvi. One of the possible sources of fiber is sieved beet pulp containing up to 67% by weight. dietary fiber and up to 22 wt. % pectin substances, about 10 wt. protein. The high content of pectin substances present has a significant effect on the breakdown of fats and carbohydrates. reduces blood cholesterol.

Přímé využití řepných řízků není však možné, protože obsahují velké množství vody, zbytkový cukr, rozpustné soli a podléhají snadno bakteriálnímu znečištění. Je proto nutno řízky zbavit zbytkového cukru, rozpustných solí, odstranit případnou bakteriální kontaminaci, provést dezinfekci, bělení vlákniny a konečně odstranění přebytečné vlhkosti. However, the direct use of beet pulps is not possible as they contain large amounts of water, residual sugar, soluble salts and are easily subject to bacterial contamination. In addition, their coloration is in many cases unsatisfactory. It is therefore necessary to get rid of residual sugar, soluble salts, to remove any bacterial contamination, to disinfect, to pulp whitening and finally to remove excess moisture.

Dosud známé postupy podle US pat. The prior art processes of US Pat. 4451489, the cuttings are mixed in 0.005-0.5M sodium metabisulphide solution to prevent further darkening, after washing with water and centrifugation, the coloring components and odor of 70 to 80% by volume of isopropanol are then removed. This process is economically demanding due to the use of isopropanol.

Takto získaná hmota se zbaví přebytečné vody vylisováním a konečně se hmota suší v sušárně horkým vzduchem s teplotou do 200 °C, přičemž teplota v sušené vrstvě nesmí přestoupit 110 °C.SUMMARY OF THE INVENTION The present invention is based on a process for producing food pulp from beet pulp as a starting material. The cuttings are washed with clean drinking water, freeing residual sugar and soluble salts, reducing microbial contamination and bleaching achieved by washing in 0.5 to 3.0 vol% hydrogen peroxide solution or 0.01 to 0.05 ¾ vol. persteril. Disinfection and discoloration can also be carried out by ozonation, separate disinfection can also be done by steam or by irradiation with a source of radiation. After disinfection with peroxide or persteril, the pulp is washed with clean drinking water. The mass thus obtained is freed of excess water by pressing and finally the mass is dried in an oven with hot air at a temperature of up to 200 ° C, the temperature in the dried layer not exceeding 110 ° C.

The main advantage of ingesting sugar beet pulps and the method according to the invention is that the sweetened pulps have a high fiber and pectin content, the proportion of which is corresponding to the final composition requirement in terms of fiber and pectin content. The method is very simple to manufacture while ensuring all hygienic and food requirements. An embodiment is shown in the following examples.

Sieved beet pulps from the extractor containing max. 0.4% by weight of sucrose are washed for 30 minutes with triple (w / w) pure water containing 0.05% by volume of persteril.
