Abstract
For the use of microbial protein, which is used in animal feed, mesophilic yeast strains are generally used (culture temperature between 30 and 35 degrees C). To maintain this temperature in countries with a tropical climate, cooling systems and a large amount of energy are required, which increases the cost of producing the protein. In our work we try to introduce Thermophilic yeasts; (culture temperature between 37 and 40 degrees C), isolated from our environment, in the process of microbial protein production, in order to eliminate cooling costs. Approximately 20 strains of the genus Cándida were isolated with an optimum temperature between 37 and 40 and 47 degrees C as maximum temperature, which showed doubling times of approximately 4 hours, in a medium that uses honey as a substrate, a system that meets the necessary characteristics for the objectives set.
