Abstract

Para la utilización de proteína microbiana, que se emplea en la alimentación animal, se utilizan generalmente cepas de levaduras mesófilas (temperatura de cultivo entre 30 y 35 grados C). Para mantener esta temperatura en los países de clima tropical, se requieren sistemas de enfriamiento y gran cantidad de energía, lo que encarece el costo de producción de la proteína. En nuestro trabajo se pretende introducir levaduras Termófilas; (temperatura de cultivo entre 37 y 40 grados C), aisladas de nuestro medio, en el proceso de producción de proteína microbiana, con la finalidad de eliminar los gastos por enfriamiento. Se aislaron aproximadamente 20 cepas del género Cándida con una temperatura óptima entre 37 y 40 y 47 grados C como temperatura máxima, las que mostraron tiempos de duplicación de aproximadamente 4 horas, en medio que utiliza miel como sustrato, sistema que reúne las características necesarias para los objetivos planteados.For the use of microbial protein, which is used in animal feed, mesophilic yeast strains are generally used (culture temperature between 30 and 35 degrees C).
