Abstract

Erfindungsgemäß wird das Wachstum der Hefen in einem pH-Bereich zwischen 5 und 6 bevorzugt durch eine PufferSubstanz, wie z.B. CaCOß, gehalten, während er in der nachlogarithmischen Phase auf 2 bis 3 bevorzugt durch die Eigensäuerung für einen längeren Zeitraum gesenkt wird,· wodurch die weniger säuretoleranten Bakterien inaktiviert werden.
