Abstract
Die Erfindung betrifft ein Verfahren zur nassmechanischen Verarbeitung von Roggenfruechten zur Gewinnung von Staerke, Proteinen, Nichtstaerkepolysacchariden, Schalen und niedermolekularen Kohlenhydraten unter Beibehaltung der wichtigen funktionellen Eigenschaften dieser Hauptinhaltsstoffe. Die erfindungsgemaessen Produkte sind fuer den Einsatz als Bestandteil von Lebensmitteln und von industriellen Hilfs- und Zusatzstoffen geeignet. Erfindungsgemaess wird den zerkleinerten Roggenfruechten in waessrigem Medium Schwefeldioxid in bis zum Erreichen eines vorgegebenen p H-Wert zugegeben, worauf eine Behandlung innerhalb eines bestimmten Temperatur-Zeit-Regimes und verschiedene Fest-Fluessigtrennungen erfolgen, so dass Staerke, Proteine und zuletzt durch eine Fuellung die proteinarmen Nichtstaerkepolysaccharide erhalten werden.The invention relates to a method for the wet mechanical processing of rye fruit for the production of starch, proteins, non-starch polysaccharides, shells and low molecular weight carbohydrates while retaining the important functional properties of these main ingredients. Neben den Proteinen, die massenmäßig mit etwa 10% vertreten sind, enthält die Trockensubstanz des Roggenkornes über 80% Kohlenhydrate, die sich ungleichmäßig auf die verschiedenen Gewebe des Kornes verteilen. Der größte Anteil, d. h. 60... 65% der Korntrockenmasse (KTM) dieser Kohlenhydrate liegt im Mehlkörper in Form der in Wasser bzw. in verdünnten Alkalilaugen unlöslichen Stärkekörner unterschiedlicher Größe vor. Die kleinen Stärkekörner werden als Fein-und die großen Körner als Grobkornstärke bezeichnet. Die Feinkornfraktion (ΙΟμτη) macht etwa 6... 10% der KTM aus. Weitere, vorwiegend in den Schalen lokalisierte, hochmolekulare Kohlenhydrate sind Cellulosen, /3-Glucane und Pentosane. Niedermolekulare in Wasser leicht lösliche Kohlenhydrate kommen mit etwa 5% der KTM als Oligo- und Monosaccharide, vorwiegend als Fruktose und Glucose vor. Da diese Kohlenhydrate vorwiegend in der Kornschale und den Zellwänden angereichert sind, ist ihr Anteil in gemahlenen Körnerfrüchten stark vom sogenannten Ausmahlungsgrad abhängig. Auf Grund ihres unterschiedlichen Extraktionsverhaltens unterscheidet man wasserlösliche und wasserunlösliche NSP. Ein Teil der letzteren (bis auf die Cellulose) ist in verdünnter Alkalilauge löslich. Die NSP enthalten in der Regel einen mehr oder weniger großen Anteil komplex oder kovalent mit den Kohlenhydraten verbundene Proteine. Auf Grund der hohen Wasserbindung und der guten Quellfähigkeit besteht ein Interesse, diese Stoffe wie andere pflanzliche Hydrokolloide zur Wasserbindung einzusetzen. Wegen ihrer chemischen Zusammensetzung aus D-Xylose und L-Arabinose besteht ferner die Möglichkeit, Pentosane zur Gewinnung dieser Zucker einzusetzen. In der DE-AS 2 047 504 wird vorgeschlagen einen Teil der wasserunlöslichen NSP innerhalb von 48 Stunden mit verdünnten Alkalilösungen bei 53...550C aus dem zerkleinerten Rohmaterial zu extrahieren und vor Aufarbeitung des neutralisierten Extraktes alle niedermolekularen organischen und anorganischen Stoffe mittels Elektrodialyse zu entfernen. Nachteilig bei Anwendung des beschriebenen Verfahrens auf Roggen ist der Umstand, daß Roggenstärke bereits bei Temperaturen oberhalb von 50°Cteilweise in Lösung geht. Somit sind weitere Verfahrensschritte erforderlich, die Stärkepolysaccharide wieder von den Pentosanen zu trennen. Aus dem gleichen Grunde kann das für die chemische Industrie in der DE-OS 3405208 vorgeschlagene Verfahren zur Gewinnung von „Hemicellulosen" aus Holz nicht auf Roggenmehl angewendet werden. Hier löst sich in der starken Alkalilauge auch die Stärke. Bei der anschließenden Reinigung mittels Ultrafiltration gelangt sie mit in das Endprodukt. Hierbei hat es sich als vorteilhaft erwiesen, vor der thermischen Trocknung das in der schleimigen Masse gebundene Wasser durch Alkohol zu verdrängen. Aus dem von den NSP befreiten Fugat wird zunächst das Fällungsmittel durch Destillation vollständig abgetrennt und gegebenenfalls zurückgewonnen bevor es durch Wasserentzug zu einem Sirup mit 75 bis 85% Trockensubstanz aufgearbeitet wird. Er enthält hauptsächlich Zucker wie Glucose, Fructose, Maltose und in geringen Mengen Maltotriose neben Aminosäuren und Proteinabbauprodukten. Der anfallende Sirup hat eine honigartige Konsistenz. Die nach der letzten Fest-Flüssigtrennung anfallenden Feststoffe, die aus Stärke und Schalen bestehen, werden nach Resuspendierung in Wasser durch Sieben und Waschen in bekannter Weise in Schalen und Stärke getrennt und aufgearbeitet. Die anfallende Rohstärke hat nach einmaliger Behandlung mit 0,5%iger Natronlauge einen Proteingehalt von nur 1 bis 1,5% und enthält neben der Grobkom- auch die Feinkornstärke. Die gesamte Rohstärke kann durch die in der Stärkeindustrie üblichen Verfahren der Raffination und Trocknung aufgearbeitet, gegebenenfalls aber auch in Korngrößenfraktionen überführt werden. Die im Siebüberschlag verbliebene Schalenfraktion wird gewaschen und getrocknet. Nach Beendigung der Autolyse wird das Autolysat einer I.Fest-Flüssigtrennung in einer Zentrifuge (S70 VEB Zentrifugenbau Leipzig) bei 3000 U/min innerhalb von 20 min und einer Temperatur von ca. 400C unterzogen und das Fugat 1 vom Sediment 1 durch Dekantation getrennt. Zum Waschen wird das Sediment 1 in 80g Leitungswasser suspendiert und 30 min bei Zimmertemperatur gerührt. Danach wird das System einer 2. Fest-Flüssigtrennung unterzogen und in das Fugat 2 und das Sediment 2 getrennt. Das Fugat 2 wird in einem Sammelgefäß mit dem Fugat 1 vereint. Das Sediment 2 wird zum Lösen alkalilöslicher Inhaltsstoffe in 80g 0,5%iger Natronlauge resuspendiert und 60 min bei Zimmertemperatur gerührt. Das System wird einer 3. Fest-Flüssigtrennung unterworfen und in das Fugat 3 und das Sediment 3 getrennt. Das alkalische Fugat (pH 0,5 bis 10) wird im Sammelgefäß mit dem Fugat 1 und 2 vereint. Zur Extraktion salzlöslicher Inhaltsstoffe wird das alkalische Sediment 3 zunächst in 80g Leitungswasser resuspendiert und 30min bei Zimmertemperatur gerührt. Danach wird der Ansatz mit 1,5 bis 2,0 ml 2 N Salzsäure neutralisiert (pH 6,2 bis 6,4) und 30 min bei Zimmertemperatur gerührt. Das System wird einer 4.
