Claims (13)

1. Fremgangsmåde til fremstilling af hydrolysater af protein og/eller fraktioner deraf, omfattende trinnene at: a. Tilvejebringe en blanding af peptidaser opnået fra mycelier af Basidiomyceter dyrket i en neddykket kultur, b. Tilsætte blandingen til et substrat indeholdende dette protein og/eller fraktioner deraf og c. Udføre hydrolysen af dette protein og/eller fraktioner deraf for at opnå hydrolysaterne; hvor blandingen af peptidaser omfatter mindst én peptidase omfattende sekvensen givet ved SEQ ID Nos. 1, 2, 3 eller 4.
2. Fremgangsmåden ifølge krav 1, hvor proteinet er valgt fra gluten, valle, soja, fortrinsvis gluten.
3. Fremgangsmåden ifølge krav 1, hvor peptidaserne er ekstracellulære enzymer.
4. Fremgangsmåden ifølge et hvilket som helst af kravene 1 til 3, hvor Basidiomyceterne er valgt fra Flymenomyceter.
5. Fremgangsmåden ifølge et hvilket som helst af kravene 1 til 4, hvor Basidiomyceterne er valgt fra slægten Pleurotus, Lentinula, Agrocybe, eller Grifola.
6. Fremgangsmåden ifølge et hvilket som helst af kravene 1 til 5, hvor Basidiomyceterne er valgt fra stammer af Pleurotus sapidus, Pleurotus eryngii, Pleurotus ostreatus, Lentinula edodes, Agrocybe aegerita, Pleurotus floridanus, eller Grifola frondosa.
7. Fremgangsmåden ifølge et hvilket som helst af kravene 1 til 6, hvor hydrolysaterne er peptider og/eller aminosyrer.
8. Anvendelse af en blanding af peptidaser opnået fra mycelier af Basidiomyceter til hydrolysen af gluten og/eller fraktioner deraf, hvor blandingen af peptidaser omfatter mindst én peptidase omfattende sekvensen givet ved SEQ ID Nos. 1, 2, 3 eller 4.
9. Anvendelse af hydrolysater opnået ved en fremgangsmåde ifølge et hvilket som helst af kravene 1 til 7 i en fødevaresammensætning, en kosmetiksammensætning og/eller en farmaceutisk eller medicinsk sammensætning.
10. Anvendelsen ifølge krav 9, hvor sammensætningen er en drik, ost, konfekturevare, desserter, dressing, frugtdrik, kødprodukt, snacks, næringsmiddelsupplement, foder, dyrefodersupplement, medicinsk diæt, hud- eller hårprodukt, gødningsmiddel, veterinære præparater, bestanddele til in v/'tro-dyrkning af mammale celler etc.
11. Blanding af peptidaser, hvor blandingen er fremstillet af mycelier af Basidiomyceter, fortrinsvis af Hymenomyceter, og hvor mindst én peptidase omfatter sekvensen givet ved SEQ ID No. 1, 2, 3 eller 4.
12. Blandingen af peptidaser ifølge krav 11, hvor Basidiomyceterne er valgt fra slægten Pleurotus, Lentinula, Agrocybe, eller Grifola, fortrinsvis valgt fra stammer af Pleurotus sapidus, Pleurotus eryngii, Pleurotus ostreatus, Lentinula edodes, Agrocybe aegerita, Pleurotus floridanus, eller Grifola frondosa.
13. Blandingen af peptidaser ifølge kravene 11 eller 12, hvor blandingen har en omdannelseseffektivitet på 3 til 20 DH, fortrinsvis 6 til 19 DH.
