Claims (6)

  1. LIPOLYTISKE ENZYMVARIANTER OG FREMGANGSMÅDE TIL FREMSTILLING DERAF
    1. Lipolytisk enzym, som: a) har en aminosyresekvens, der udviser mindst 90% identitet til den i SEQ ID NO: 7; og b) har phospholipaseaktivitet og c) har et forhold mellem lysophospholipase og phospholipase på mindre end 1000 og d) omfatter mindst én aminosyreændring svarende til position H257W, S142A, V157D+S271P, S80T+A127T, D263G, Y21W, S80T, R274A+275YRSAESVDKR eller R274A+275YRSAESVDKAATMTDAELEKKLNSYVQMDKEYVKNNQARS i SEQ ID NO: 7; og hvor forholdet mellem lysophospholipase og phospholipase er defineret som lysophospholipaseaktiviteten divideret med phospholipaseaktiviteten, hvor phospholipaseaktivitet er bestemt ved 30°C ved anvendelse af 4% (vægt/volumen) lecithin i 50mM natriumacetat, 5mM CaCI2, pH 5,0, og lysophospholipaseaktivitet er bestemt ved 30°C ved anvendelse af 1% (vægt/volumen) lysolecithin i 50mM natriumacetat, 5mM CaCI2, pH 5,0.
  2. 2. Lipolytisk enzym ifølge krav 1, som har et forhold mellem lysophospholipase og phospholipase på mindre end 1000, og som omfatter en aminosyresekvens, der er afledt fra en Fusarium-lipase der omfatter mindst én aminosyreændring svarende til SEQ ID NO: 7: a. H257W; b. S142A; c. V157D+S271P; d. S80T+A127T; e. D263G; f. Y21W; g. S80T; h. R274A+275YRSAESVDKR; i. R274A+275YRSAESVDKAATMTDAELEKKLNSYVQMDKEYVKNNQARS; og hvor forholdet mellem lysophospholipase og phospholipase er defineret som lysop-hospholipaseaktiviteten divideret med phospholipaseaktiviteten, hvor phospholipase-aktivitet er bestemt ved 30°C ved anvendelse af 4% (vægt/volumen) lecithin i 50mM natriumacetat, 5mM CaC^, pH 5,0, og lysophospholipaseaktivitet er bestemt ved 30°C ved anvendelse af 1% (vægt/volumen) lysolecithin i 50mM natriumacetat, 5mM CaCI2, pH 5,0.
  3. 3. Fremgangsmåde til fremstilling af en dej eller et bagt produkt fremstillet af dej, hvilken fremgangsmåde omfatter tilsætning af det lipolytiske enzym ifølge et hvilket som helst af kravene 1-2 til dejen.
  4. 4. Anvendelse af det lipolytiske enzym ifølge et hvilket som helst af kravene 1-2 ved fremstilling af pasta.
  5. 5. Anvendelse af det lipolytiske enzym ifølge et hvilket som helst af kravene 1-2 ved fremstilling af nudler.
  6. 6. Anvendelse af det lipolytiske enzym ifølge et hvilket som helst af kravene 1-2 ved ostefremstilling.
