Abstract
Изобретение относится к способу изготовления колбасных изделий, таких как сырые, обработанные кипятком, вареные колбасы или паштеты. Изобретение предусматривает использование в качестве единственной добавки животного происхождения чистого мышечного мяса из свиной ляжки и/или лопатки или, по усмотрению, свиной печени. При этом содержание жира в мышечном мясе составляет максимум 5 вес.%, а в свиной печени максимум 6вес/%. Кроме жира, содержащегося в мышечном мясе или в свиной печени, не добавляется никакого другого жира, такого как сало или растительное масло, и никаких жирозаменителей на основе масла.
