Abstract

Se divulga un método para almacenar productos que respiran, en particular bananas, durante la maduración. El método permite que las bananas permanezcan en la condición de madura durante período de tiempo extenso mientras, al mismo tiempo, mejoran las características de dulzura y sabor. Además, el método no requiere manipulación separada y re-embalaje de las bananas entre el inicio del proceso de maduración y el almacenamiento/embarque de las bananas. En este método, la maduración se inicia insertando gas adicional en el envase de las bananas, de modo que el medio gaseoso contiene desde aproximadamente 2,0% hasta aproximadamente 5,0% de oxígeno, desde aproximadamente 5,0% hasta aproximadamente 15,0% de dióxido de carbono, desde aproximadamente 0,8% hasta aproximadamente 1,5% de etileno, el resto del medio gaseoso es predominantemente nitrógeno, durante un período desde aproximadamente 0,5 hasta aproximadamente 5 segundos.
