Abstract

La presente invención se refiere a composiciones de relleno que comprenden un aceite encapsulado, y opcionalmente un aceite líquido libre. El aceite encapsulado comprende al menos un 40% peso/peso de un aceite líquido encapsulado en un material de matriz. La invención también se refiere al proceso para la preparación de la composición de relleno y su uso en productos alimentarios compuestos.
