Abstract
Se refiere a un proceso para fraccionar avenas, para obtener una solución acuosa que contiene proteína de avena, soluble, estable, el proceso comprende: preparar una pasta aguada, acuosa, que comprende agua y un substrato de avena; fraccionar el substrato de avena manteniendo la pasta aguada a una temperatura suficiente, y tratar la pasta aguada con agitación suficiente, una base o ácido suficiente para ajustar el pH de la pasta aguada, acuosa, fuera de la gama isoeléctrica, y suficiente proteasa para hidrolizar una cantidad suficiente de proteína de avena, por medio de lo cual se obtiene una pasta aguada translúcida la cual comprende una fracción sólida, insoluble, una fracción líquida insoluble, una fracción de proteína de avena, soluble, estable, una fracción grasa de avena, soluble y una fracción de carbohidrato de avena, soluble; y remover la fracción líquida insoluble y la fracción sólida insoluble de la pasta aguada por medio de lo cual se recupera una solución acuosa estable, con un contenido bajo de grasas, transparente, final, que comprende agua y una fracción de proteína de avena soluble, estable, una fracción de grasa de avena soluble, y una fracción de carbohidrato de avena, soluble. La presente invención está relacionada además con la solución acuosa del proceso anterior y a una fracción de proteína de avena, soluble, estable, en forma purificada.
