Finally, an alkaline material such as sodium bicarbonate should be added to the bath to act as a pH modifier gradually to raise the pH to above about 6 typi ⁇ cally 6.5 to 7. I have found it useful to add such an alkali in three batches, each separated by about 5 to 15 minutes, typically adding from 0.003 to 0.006 grams of sodium bicarbonate per kilogram of fish skins in each batch.
