  • the amount of power employed for household cooking may be as little as 400 watts and as high as 2,000 watts for some catering ovens. In general, however, most domestic microwave ovens are in the range of 600 to 1,000 watts at the frequency of 2,450 megahertz.

  • the heating time is usually less than 2 minutes and often less than 1 1/2 minutes. When multiple servings are prepared, a somewhat longer time is needed depending on the amount of servings.
  • Example 6 gms of roasted and ground coffee in an infusion bag were placed in a cup containing 150.25 g (5.3 ozs.) of water having a temperature of 20°C (68°F).
  • the roasted and ground coffee had an average particle size of about 480 mesh and the infusion bag had a porosity of about 129.8 m 3 per minute per square metre (426 cubic feet per minute of air per square foot) at 126.4 Nm- 2 (0.5 inches of water).
  • the cup was placed on a gas stove and heated by flame to a temperature of 82.2°C (180°F) in 2 minutes. After heating, the cup was removed from the heat and the coffee bag was dunked three times and then squeezed into the cup. It was determined that the coffee brew had soluble solids of 0.51 weight percent. It was determined that the final brew color was extremely light and the coffee had very thin flavor.
  • This example is also presented as a Control.
  • a coffee bag similar to that employed in Control A was placed in a cup container. Boiling water at a temperature of 100°C (212°F) was added to the cup containing the coffee bag. The temperature of the cup after 30 seconds was 82.2°C (180°F). The coffee bag was dunked three times at the start of brewing, three times after one minute and three times at the end of two minutes. At the end of two minutes the bag was removed and squeezed into the brew. The soluble solids of the brew was determined to be 0.63 weight percent. While the color of this coffee was acceptable, it was determined that the cup strength of the coffee was weak and lacking total coffee character.
  • each coffee bag was immersed into preheated water, microwaved heated to 82.2°C (180°F), dunked three times and then squeezed into the cup.
  • the first cup of water was preheated to 62.2°C (144°F) and then microwave heated for about 44 seconds.
  • a cup of coffee with good flavor was produced.
  • the second cup of water was preheated to 65.6°C (150°F) and then microwave heated for about 35 seconds.
  • a cup of coffee with good flavor was prepared.
  • the third cup of water was preheated to 68.3°C (155°F) and the microwave heated for about 28 seconds. A thin brew not acceptable as coffee was produced.

Claims (14)

1. Un procédé de préparation d'une boisson au café, comprenant:
(a) l'immersion d'un sachet d'infusion à café contenant un café torréfié et un poudre dans un récipient d'eau, la température de l'eau étant située dans la plage comprise entre 10°C et 65,5°C;
(b) le chauffage par micro-ondes de ladite eau contenant le sachet d'infusion à café, rempli de café torréfié et en poudre, à la température appropriée pour produire une boisson au café.
2. Un procédé selon la revendication 1, dans lequel l'eau est chauffé par micro-ondes, à une température allant d'à peu près 71,1°C à à peu près 98,9°C.
3. Un procédé selon la revendication 1 ou 2, dans lequel la température de l'eau avant le chauffage par micro-ondes va d'à peu près 15,6°C à à peu près 23,9°C.
4. Un procédé selon l'une quelconque des revendications précédentes, dans lequel l'eau est présente en quantité d'eau moins 113,4 g.
5. Un procédé selon la revendication 4, dans lequel l'eau est présente en quantité d'au moins 170,1 g.
6. Un procédé selon l'une quelconque des revendications précédentes, dans lequel le sachet d'infusion contient d'à peu près 5 g à à peu près 15 g de café torréfié et en poudre.
7. Un procédé selon l'une quelconque des revendications précédentes, dans lequel le chauffage par micro-ondes s'effectue sous une fréquence de 2,450 MHz et avec une longueur d'onde de 12,2 cm.
8. Un procédé selon l'une quelconque des revendications précédentes, dans lequel le chauffage par micro-ondes utilise d'à peu près 400 W à à peu près 2,000 W.
9. Un procédé selon la revendication 8, dans lequel le chauffage par micro-ondes utilise d'à peu près 600 W à à peu près 1,000 W.
10. Un procédé selon l'une quelconque des revendications précédentes, dans lequel le cafe torrefié et en poudre présente une taille moyenne de particule allant de 400 mesh à peu près 1100 mesh.
11. Un procédé selon la revendication 10, dans lequel le matériau du sachet présente une porosité d'à peu près 91,4 à à peu près 198,1 m3 par minute par mètre carré sous une pression de 124,6 Nm-2.
12. Un procédé selon l'une quelconque des revendications précédentes, comprenant en outre l'enlèvement et la réimmersion du sachet d'infusion du café dans l'eau chauffée par micro-ondes.
13. Un procédé selon l'une quelconque des revendications précédentes, comprenant en outre le pressage du sachet d'infusion du café dans l'eau chauffée par micro-ondes.
14. Un arrangement pour boisson au café, comprenant un sachet à infusion de café immergé dans un récipient d'eau à une température située dans la plage allant de 10°C à 65,6°C et un appareil de chauffage par micro-ondes arrangé pour chauffer ladite eau.
