Abstract

Le procédé décrit, qui sert à extraire de l'huile de viscères de poissons, consiste à chauffer les viscères à une température supérieure à +30°C, tout en les maintenant dans un récipient perméable au liquide, dans lequel l'huile extraite des viscères par chauffage est séparée par égouttage, le reste des viscères restant dans le récipient. Dans une étape initiale et avant d'être chauffés à la température mentionnée ci-dessus, les viscères sont surgelés, c'est-à-dire congelés à une température inférieure à -18°C, avant d'être dégelés de leur état surgelé.
