Claims (9)
- Verfahren zum Behandeln von Olivenöl, das die folgenden Schritte umfasst:dadurch gekennzeichnet, dass die emulgierte wässerige Phase bei einem pH-Wert von mindestens 5,5, insbesondere bevorzugt bei mindestens 7, für mindestens 30 Sekunden der Aussetzzeit aufrechterhalten wird.Herstellen einer Emulsion von Olivenöl mit einer wässerigen Phase,Aussetzen des Olivenöls der dispergierten wässerigen Phase für mindestens 30 Sekunden undEntfernen der wässerigen Phase vom Olivenöl,
- Verfahren nach Anspruch 1, dadurch gekennzeichnet, dass die wässerige Phase aus Wasser besteht, das reaktive Ionen enthält, die in der Lage sind, Substanzen, die eine pH-Wert erniedrigende Aktivität aufweisen, zu neutralisieren.
- Verfahren nach einem der vorhergehenden Ansprüche, dadurch gekennzeichnet, dass der pH-Level für mindestens 2 Minuten, bevorzugt für mindestens 5 Minuten, insbesondere bevorzugt für mindestens 30 Minuten, aufrechterhalten wird.
- Verfahren nach einem der vorhergehenden Ansprüche, dadurch gekennzeichnet, dass die wässerige Phase keine wesentliche Menge an Entbitterungsenzym enthält.
- Verfahren nach einem der vorhergehenden Ansprüche, dadurch gekennzeichnet, dass die zuzugebende wässerige Phase von Olivenöl stammende Polyphenole enthält.
- Verfahren nach einem der vorhergehenden Ansprüche, dadurch gekennzeichnet, dass das Verhältnis von wässeriger Phase und Olivenöl in der Emulsion 1:10 bis 4:1, bevorzugt 1:4 bis 2:1, beträgt.
- Verfahren nach einem der vorhergehenden Ansprüche, dadurch gekennzeichnet, dass die wässerige Phase durch Abdampfen des Wassers unter reduzierten Druckbedingungen entfernt wird.
