Abstract

L'invention concerne un procédé permettant de fabriquer des produits du type saucisse, avec un emballage de type tuyau flexible ou sachet. L'emballage est d'abord garni de produit de remplissage, puis est resserré en tresse. Une section tressée de longueur voulue, exempte de produit de remplissage, est ensuite réalisée et est fermée par mise en place et fermeture d'au moins une pince de fermeture. Les différentes étapes du processus de fermeture, y compris la striction de l'emballage, la prolongation de la tresse, ainsi que la mise en place et la fermeture de(s) pince(s) de fermeture peuvent être pilotées au moins en partie indépendamment les unes des autres. L'invention concerne en outre un dispositif de fermeture pour fabriquer des produits du type saucisse avec un emballage de type tuyau flexible ou sachet, comportant des éléments (14) pour resserrer ledit emballage, des éléments (11, 12) pour prolonger la section tressée exempte de produit de remplissage par écartement des éléments de striction, ainsi que des éléments (18, 22) pour mettre en place et fermer les pinces de fermeture. Les éléments de striction, les éléments d'écartement et les éléments permettant de mettre en place et de fermer les pinces de fermeture peuvent être pilotés au moins en partie indépendamment les uns autres, par exemple à l'aide d'une unité de commande (28) programmable, commune aux systèmes d'entraînement associés.
