Abstract

La présente invention concerne de nouvelles souches de Lactobacillus à durée de conservation prolongée, c'est-à-dire capables de prolonger la durée de conservation à température ambiante d'un produit alimentaire, tel qu'un produit laitier fermenté, lorsqu'elles sont ajoutées à de tels produits, sans diminuer fortement l'effet antimicrobien, antifongique et/ou anti-levure desdites souches. Selon un autre aspect, la présente invention concerne une composition antimicrobienne, antifongique ou anti-levure. Selon encore un autre aspect, la présente invention concerne un produit alimentaire. Selon encore un autre aspect, l'invention concerne un procédé de fabrication d'un produit alimentaire. Selon encore un autre aspect, la présente invention concerne l'utilisation d'une souche de Lactobacillus pour procurer un effet antifongique, antimicrobien et/ou anti-levure, par exemple pour un produit laitier fermenté.
