Abstract

La présente invention concerne un procédé de production d'acide butyrique consistant : à apporter une liqueur de fermentation comprenant du butyrate, de l'acétate, au moins un contre-ion et au moins un coproduit de fermentation, à un rapport poids/poids butyrate/acétate compris entre 2 et 20, à un pH compris entre 5,0 et 8,0 et à une concentration combinée de butyrate et d'acétate comprise entre 20,0 et 75.0 % en poids ; à combiner la liqueur de fermentation avec un acide minéral présentant une concentration supérieure à 30 % en poids, l'acide minéral formant avec le contre-ion un premier sel minéral dont la solubilité dans l'eau à 25 °C est supérieure à 25 % en poids, il en résulte un produit d'acidulation comprenant une phase organique comprenant de l'acide butyrique, de l'acide acétique et de l'eau, et une phase aqueuse comprenant le premier sel minéral, le pH de la phase aqueuse étant compris entre 2,0 et 4,7 ; à séparer les deux phases pour former une phase organique et une phase aqueuse ; et à séparer l'acide butyrique de la phase organique.
