Abstract
La présente invention concerne un substitut laitier comprenant une source de mycoprotéine dispersée dans de l'eau avec une gomme gellane à teneur élevée en acyle. Un tel substitut laitier est caractérisé par une texture et un arôme proches d'un produit laitier correspondant et par une bonne stabilité physique, même lorsqu'il est préparé sans homogénéisation à haute pression. L'invention concerne également un procédé de production d'un tel substitut laitier. Le substitut laitier peut avantageusement être utilisé pour produire n'importe quel produit alimentaire qui peut être dérivé d'un produit laitier.
