Abstract
Nuevo tipo de instalación para la fermentación de masa panificable, y bollería, de la clase de las que comprenden un túnel de climatización, que esencialmente se caracteriza porque por el interior de dicho túnel pueden discurrir en suposición de apoyo normal unos carros estanterías provistos de ruedas en los que fermenta la masa sobre unos tableros que tienen unas dimensiones ligeramente inferiores a las de la sección interna del túnel y que tienen entrada y salida por los extremos de éste, y porque dicho túnel presenta un foso excavado en su suelo en sentido longitudinal, existen al menos dos cadenas sinfín, montadas en paralelo sobre piñones que reciben el movimiento de un grupo moto-reductor, las cuales, a intervalos regulares presentan unos pivotes emergentes verticalmente hacia fuera concebidos para encajarse en unos dispositivos de enganche de que van dotadas las estanterías por su parte inferior.
