Abstract
Preservative is made by saponification of fatty acids in aq. alcohol with alkali hydroxide or carbonate, in concn. such that the solid prods. contain 40-90% ethanol, ave. compsn. being 87.8% ethanol, 7.8% sodium salt of fatty acid and 4.4% water. It is packed into sachets, pref. of sealed plastics film, which are inserted into the container with the food and perforated before sealing and/or evacuating. This saturates the container with small amts of ethanol vapour, preserving the food until opened by the consumer, when the vapour rapidly disappears. (Dwg.No.0/0) (0/0)
