Abstract
LA INVENCION SE REFIERE A LA TECNICA DE PRODUCCION DE BEBIDAS.EL METODO REIVINDICADO PARA PRODUCIR VINOS ESPUMOSOS SE REALIZA EN FLUJO CONTINUO DESAIREANDO LA MEZCLA DE MATERIALES VINICOS BLANCOS EN PRESENCIA DE LEVADURA INMOVILIZADA EN EL SORBENTE. LA MEZCLA DESAIREADA DE MATERIALES VINICOS BLANCOS O LA MEZCLA DE MATERIALES VINICOS ROJOS ES INTRODUCIDA, MEZCLADA CON EL LICOR, A LA ZONA DE ACHAMPAÑADO QUE INCLUYE UNA CAPA DE SORBENTE, BAJO DICHA CAPA DE SORBENTE. LA LEVADURA NECESARIA PARA LA FERMENTACION SECUNDARIA EN LA ZONA DE ACHAMPAÑADO Y PARA EL ENRIQUECIMIENTO DEL VINO QUE SE ESTA ACHAMPAÑANDO CON SUSTANCIAS BIOLOGICAMENTE ACTIVAS ES SOMETIDA A LA ADAPTACION A LAS CONDICIONES DEL PROCESO DE ACHAMPAÑADO. PARA ESTA FINALIDAD, LA LEVADURA ES COLOCADA EN LA ZONA DE ACHAMPAÑADO, DONDE SE LA MANTIENE UN CIERTO TIEMPO EN CONDICIONES DE AISLAMIENTO DEL VINO QUE SE ESTA ACHAMPAÑANDO. TERMINADA LA ADAPTACION, LA LEVADURA ES MEZCLADA CON EL LICOR Y ES ALIMENTADA BAJO LA CAPA DEL SORBENTE PARAREALIZAR EL ACHAMPAÑADO, ALLI MISMO SE ALIMENTA LA MEZCLA DE MATERIALES VINICOS CON EL LICOR.EL VINO ACHAMPAÑADO ESPUMOSO ES ENFRIADO DESPUES DE ACHAMPAÑARLO, ES FILTRADO Y EMBOTELLADO.
