Abstract

Polysaccharides from the endosperm of seeds of Prosopis juliflora (syn: Prosopis chilensis, Cevatoria chilensis, Mimosa juliflora) and their ether and ester derivatives and their partially depolymerized derivatives. These polysaccharides are readily soluble in cold water, are biodegradable, and are useful as thickening agents.
