Abstract
EL OBJETO DEL PROCEDIMIENTO PARA LA REGENERACION DE SALMUERAS DE FERMENTACION DE ACEITUNAS VERDES ESTILO ESPAÑOL MEDIANTE ULTRAFILTRACION-OSMOSIS INVERSA Y FLOCULACION PREVIA CON BENTONITA ES LA REGENERACION SE LAS SALMUERAS DE FERMENTACION DE ACEITUNAS VERDES ESTILO SEVILLANO Y DE OTROS PRODUCTOS VEGETALES PARA QUE SE PUEDAN VOLVER A UTILIZAR COMO LIQUIDO DE GOBIERNO EN EL ENVASADO DE LOS MISMOS. EL PROCESO CONSISTE EN LA ADICION DE UNA SUSPENSION DE BENTONITA A LAS SALMUERAS, QUE ELIMINA POR PRECIPITACION GRAN PARTE DE LOS SOLIDOS EN SUSPENSION, POR LO QUE MEJORA EL FLUJO DE PERMEADO EN EL EQUIPO DE ULTRAFILTRACION-OSMOSIS INVERSA. A CONTINUACION, EL SOBRENADANTE SE SOMETE A UNA ULTRAFILTRACION EN UN EQUIPO DOTADO DE UNAS MEMBRANAS DE CORTE MOLECULAR ENTRE 500 Y 2000 DALTONS. EL LIQUIDO QUE SE OBTIENE SE PUEDE REUTILIZAR DIRECTAMENTE O CONSERVAR EN CONDICIONES ANAEROBICAS. LA ADICION DE SOSI2 Y OTROS ANTIOXIDANTES MEJORA LA ESTABILIDAD DE LA SOLUCION Y PERMITE PROLONGAR EL PERIODO DE CONSERVACION.
