EL ALMIDON POSEE UNA ESTRUCTURA DE ALTO PESO MOLECULAR RAMIFICADA, CON UN MINIMO DE 85% DE AMILOPECTINA, Y UN GRADO DE CATIONIZACION O GRADO DE SUSTITUCION DE 0,045 A 0,40. EL PROCEDIMIENTO CONSISTE EN DISOLVER EL ALMIDON EN AGUA, AJUSTANDO LA TEMPERATURA POR ENCIMA DEL PUNTO DE FUSION DEL AGENTE ENCOLANTE, Y ADICIONAR EL AGENTE ENCOLANTE A LA SOLUCION, SOMETIENDO AL EMULSION TOSCA FORMADA A FUERZAS DE CIZALLADURA PARAREDUCIR EL TAMAÑO DE PARTICULAS DE LA EMULSION.
