EL PROCESO TRADICIONAL DE FABRICACION DEL TURRON TIPO "JIJONA", CONSISTE EN LO SIGUIENTE: SE MUELE UN TURRON DE ALICANTE Y LA PASTA MOLIDA ES SOMETIDA A UNA COCCION CON MUY LIGERA AGITACION DE LA MISMA, HASTA QUE TRANSCURRIDO UN TIEMPO LA PASTA ADQUIERE UNA CONSISTENCIA QUE ES MEDIDA POR LA SIMPLE OBSERVACION DEL MAESTRO TURRONERO. EN BASE A ESE PROCESO ARTESANAL, LAS MEJORAS CONSISTEN EN REALIZAR EL PROCESO EN CONTINUO O DISCONTINUO CON UN NUEVO SISTEMA DE AGITACION CAPAZ DE PROPORCIONAR LA MEZCLA ADECUADA Y EN PROVOCAR LA INVERSION DE FASE EN EL DISPOSITIVO DE AGITACION Y MEZCLADO EN EL QUE TIENE LUGAR LA COCCION EN UN TIEMPO MUY INFERIOR AL EMPLEADO CONVENCIONALMENTE.
