EL MICROORGANISMO CRECE ANAEROBIAMENTE DE FORMA TERMOFILICA Y PERMITE LA UTILIZACION DE SUSTANCIAS QUE CONTIENEN QUERATINA, POR EJEMPLO PLUMAS, COMO SUBSTRATO. LA ENZIMA SE OBTIENE MEDIANTE EL MICROORGANISMO EN EL MEDIO O SE LOCALIZA EN EL MICROORGANISMO CON CAPACIDAD DE SUSTANCIAS QUE CONTIENEN QUERATINA DE DISOLUCION SIMILAR A LA PLUMA, CABELLO O CUERNO, DENTRO DE LOS POCOS DIAS SIGUIENTES Y SON ACTIVOS ENTRE 50 Y 105 4 Y 12. LA HIDROLISIS ENZIMATICA DE PEPTIDOS, ESPECIALMENTE SUSTANCIAS QUE CONTIENEN QUERATINA, SE REALIZA A UNA TEMPERATURA MAYOR O IGUAL DE 70 UEDE SER TAMBIEN GUIADA A UN VALOR DE PH DE 11 Y A TEMPERATURA ALTA.
