Abstract
The process starts with a disposable or reusable container, similar to a conventional paellera (paella pan) in which all the paella ingredients are precooked in a conventional manner, and the container and its contents are placed in a bag which is hermetically sealed and to which a vacuum is applied. The bag is then placed in an autoclave for sterilization of its contents. After the sterilization period, which can vary depending on the temperature, size of the container and ingredients, the paella ingredients are cooled and later the bag is removed from the autoclave and placed in a cardboard box for storage and distribution. The paella ingredients precooked in this way can be kept in perfect condition at ambient temperature for a long period of time, in excess of one year.
