Abstract

Procedimiento de extracción de harina. En la actualidad se obtiene la harina por molienda del grano de trigo tras su paso en repetidas veces a través de parejas de cilindros que giran en sentido contrario y a distintas velocidades y presiones. A consecuencia de este proceso en el que se separa la harina de la piel del grano, esta última (salvado o harinillas) lleva adheridas partículas de harina. El procedimiento que nos ocupa consiste en hacer desprender las partículas de harina adheridas a la piel del grano, aprovechando que el salvado o piel del grano es elástica, sacudiéndolo enérgicamente para separar la materia que no pertenece a su malla estructural, que es la harina. Se somete al salvado dejado como limpio en el proceso de extracción de harina en máquinas convencionales de molinería, a un impacto producido en una máquina rotativa que en el fuerte choque de las partículas entre sí o contra algún elemento fijo, se desprende la harina, mientras que el salvado o subproductosano se trocean, separándose a continuación en la forma conocida.
