PARA OBTENCION DE UNA BIOMASA QUE SE PUEDE UTILIZAR DIRECTAMENTE COMO FERMENTO DE PANIFICACION SIN SEPARACION PREVIA ENTRE MEDIO DE CULTIVO Y BIOMASA Y SIN AÑADIDO DE LEVADURA INDUSTRIAL, SE CULTIVA AL MENOS UNA CEPA DE LEVADURA EN UN MEDIO DE CULTIVO ESPECIFICADO EN LA DESCRIPCION. PREFERENTEMENTE, DICHO FERMENTO DE PANIFICACION COMPRENDE COMO LEVADURA LA CEPA SACCHAROMYCES CEREVISIAE STEINERI DSM 9211.
