GRASA QUE PUEDE OBTENERSE SOMETIENDO LA MEZCLA DE GRASAS DE UNA GRASA VEGETAL Y UNA GRASA ANIMAL, POR EJEMPLO SEBO BOVINO O UNA FRACCION DE SEBO BOVINO, A UNA INTERESTERIFICACION. ESTO MEJORA CONSIDERABLEMENTE LA VELOCIDAD DE CRISTALIZACION DE LA MEZCLA DE GRASAS. LA INTERESTERIFICACION AUMENTA TAMBIEN EL CONTENIDO DE GRASAS SOLIDAS A TEMPERATURA AMBIENTE DE 20 A 25 C, MIENTRAS QUE EL CONTENIDO DE GRASAS SOLIDAS DISMINUYE A TEMPERATURAS DE 35 A 40 ACION CON AGLUTINANTES COMO HARINAS Y ALMIDONES, SON NOTABLEMENTE ADECUADAS PARA SU USO EN LA PRODUCCION INDUSTRIAL DE SOPAS Y SALSAS DESHIDRATADAS.FAT THAT CAN BE OBTAINED BY SUBJECTING THE FAT MIXTURE OF A PLANT FAT AND AN ANIMAL FAT, FOR EXAMPLE BOVINE SEBO OR A SEVENTINE BOVINE FRACTION, TO AN INTERESTERIFICATION. THIS CONSIDERABLY IMPROVES THE CRYSTALLIZATION SPEED OF THE FAT MIXTURE. INTERESTERIFICATION ALSO INCREASES THE CONTENT OF SOLID FATS AT ROOM TEMPERATURE FROM 20 TO 25 C, WHILE THE CONTENT OF SOLID FATS DECREASES TO TEMPERATURES FROM 35 TO 40 ATION WITH BINDERS LIKE FLOURS AND STARCHES, THEY ARE NOTARELY SUITABLE FOR INDUSTRIAL USE OF DEHYDRATED SOUPS AND SAUCES.
