Abstract

La invención se refiere a un procedimiento para producir un material alimentario que tiene una alta concentración de eriocitrina, el cual comprende la extracción de al menos uno de entre zumo, la cáscara y el desecho de zumo exprimido de un cítrico con un disolvente polar, la aplicación del extracto obtenido a una resina de adsorción sintética y la separación y recuperación del material alimentario con una alta concentración de eriocitrina usando un disolvente orgánico como, por ejemplo, alcohol hidratado. Se puede obtener a nivel industrial, de forma muy eficaz y sin ingredientes de sabor amargo, un material alimentario que tiene una alta concentración de eriocitrina como ingrediente antioxidante, y se pueden producir bebidas y alimentos con un alto efecto antioxidante.
